Not worth the extra effort. I may try again with the wings just to see. You videos look and sound really good. Great Job on that !
I'm from Georgia and this is almost EXACTLY how I make mine. Except I let it sit for about 30 minutes after flouring. And I do NOT use oil, I use shortening because when the chicken's cold (leftover), it doesn't get soggy.
i finally found buttermilk in egypt... it's called laban reyah was wondering why it was green when i poured it over the chicken... i accidently bought apple flavour... hope the chicken turns out ok! lol
My dad recently taught me how to make fried chicken... I've been making it any chance I get. I don't do an overnight soak, what I do is to put it in egg, flour it, dip it in the egg again, flour it again, then put it aside. There are many ways to make chicken people. Just because it's "southern chicken" doesn't make it the best.
You know how to fry, oddly you would be surprised how many ppl have no clue how to do this, it takes patience. I always did the seasoned flour and brined my chicken, but I think I will try this method too.
@greenbeast1345 No, this man is clearly crazy if he believes that broad daylight is night time. How am I supposed to trust that this chicken is good if this man can't even differentiate day from night?
@hustlamuzick345 Then, he is wasting his time. If his time is so valuable, why doesn't he spend it doing charity work? This world needs his help. I pick up litter, and earn money to donate to charities in my spare time. Why does he not do his part instead of playing dress up?
I'm from Scotland and have been looking for southern fried chicken recipe..looks easy and delicious! @aidan21 Comedy, huh? I'm not so sure a lot of people would find that funny. Still seems like anger. You don't know me and I've never done anything to hurt you. But, you still take the time to disparage me and now my cooking. Once again, I hope the best for you.

@darrylhaynes No I didn't. Real southern fried chicken is a shallow fry in a cast iron pan, not a deep fry where the chicken is suspended in oil. Chicken prepared in a shallow, dark pan will always come out a shade or two darker. -Kirk
@hahaYOUREdead1 You can also use evaporated milk (not to be confused with sweetened condensed milk, or plain yoghurt thinned with a touch of milk. Hope that helps. -Kirk
I have tried all sorts of ways to make fried chicken and this was finally my sucess!!! I didn't even soak the chicken over night, all but 15 mins did the trick!! The chicken was crispy and juicy! Thanks so much!!!
Kirk, I tried your recipe and it is the bomb! In fact, my chicken tasted even better the next day! BTW: I don't care what some haters say, I think you're pretty funny!!
I love chicken wings.. you can't be a beer drinkin all American and not like wings.. Chicken Breast sucks because it is DRY like the sahara desert. Lacks moisture and flavor... Even on Thanksgiving... that part of the turkey is DRY than a 80 year's woman's vajay jay after menopause.
I dont like chicken wings you dont get hardly any meat off them its mostly all bone,,I prefere chicken breasts I can take a cold cooked chicken breast and make a nice chicken sandwhich out of it ,,,,but with a wing you would have to pile up a bone yard before you get enough meat off of it for a sandwhich,,Ive always wanted to learn how to fry chicken but Im afraid to cook with hot oil for fear of a grease fire,,
@nottsgmoney You can use evaporated milk (not to be confused with sweetened condensed milk), or you can use plain yogurt thinned a little with a bit of whole milk. Hope this helps. -Kirk
@lizzfrmhon I wanted to thank you for taking the time out of your busy schedule to reach out. Your kindness and graciousness are unmatched and I am honored to receive the joy you so selflessly spread. Keep up the good work. The world needs more people like you.
@Gutsyndicate Boiling first would most likely result in overcooking the chicken, especially the breast pieces. I have had fried chicken that was lightly smoked first, which was delicious. But, I'd stay away from parboiling before frying. -Kirk
Your chicken sounds great! But here in arkansas its not sweet tea dang i hate it when it gets called that.Sure your not going to drink it without sugar but we just call it iced tea thanks.P.S I never make my iced tea super sweet that would be syrup tea no thanks.Your video is very informative!!!
@xxCrazyKid It can mean teaspoon, tablespoon, or any other measurement. The purpose of giving the recipe in "parts" is so that you can make as little or as much of the seasoning as you wish. Let's say a recipe calls for 2 parts salt and 1 part pepper. You could use 2 tablespoons of salt and 1 tablespoon of pepper, or 2 cups of salt and 1 cup of pepper. Think of it as a ratio. Does that make sense? -Kirk
@xxCrazyKid I usually make very large batches and keep it in tupperware. When I need it, I load up my pizza shaker and I'm good to go. You can use this seasoning on lots of things so helpful to keep it on hand. -Kirk
@pepperannziggi I totally agree with you. I'm a big wing and thigh fan. Legs taste great, but contain a lot of cartilage. Breasts are fine if you're looking to cut the fat, but they lack in flavor and must be cooked perfectly in order to keep them juicy. Thanks for watching the vid. -Kirk
I used the techniques from this video when I made my first successful batch of fried chicken legs a few weeks back. I forgot the salt and pepper in the buttermilk that time, and I use my own seasoning blend: paprika, salt, pepper, a "soul" seasoning blend I found at a discount market, garlic powder, onion powder, and sage. Came out great. Tomorrow I'm doing it again, but this time with wings. You should try it in cast iron, with a lid; I use a deep pan and don't turn quite so much.
This is great... Ive been trying to make fried chicken perfectly for a while and making it tasting great. I did this and it turned out great tasted awesome im gunna be getting fat. MMMMM FRIED CHICKEN YUM
@CearaQC Anywhere from 10 to 12 minutes for the remaining pieces depending on their size. The internal temperature of the breasts should read 160, and 180 for the thighs and legs. Hope that helps. -Kirk
@knuxfan23 I don't understand why that song would be offensive to southerners. Please enlighten me. You are the first person who's expressed that and I'm interested in hearing your thoughts. -Kirk
@knuxfan23 While a lot of TV shows stereotype the south, I'm still not clear how the music chosen for my video would be offensive. In no way was it making fun of anyone, nor does it send the message that it's the only type of music listened to in the south. I love the south. Just returned from Nashville where I heard all types of music, including the type I used in the video. Nonetheless, I'm sorry you feel that way.
EXCELLENT recipe-video, Chef! Great dissemination of all the info any would need to know to replicate true American Southern fried chicken, & also what to serve with it for a Southern meal. The only lack I see is that many people outside of USA don't know about or don't have access to buttermilk - the key ingredient.
BUTTERMILK:
The most common substitution is the following:
1 cup buttermilk = 1 cup milk + 1 Tablespoon vinegar or lemon juice; set it aside for 10 minutes.
The desert island bit, i would get sick of anyfood. I reckon homemade would be much much tastier than that horrible KFC chicken, that makes u wna puke after too many.
@mikeygeneral i live in the south and you would be surprised....dont judge people just by what you hear around other states...and im from louisiana....

Came out great. Tomorrow I'm doing it again, but this time with wings. You should try it in cast iron, with a lid; I use a deep pan and don't turn quite so much.

@mountimprobable Nice job! I've seen other people close the lid. Maybe I'll try it sometime. -Kirk

The talking was good. It was entertaining and informational. I mean he could have just went straight to the point but what fun would that be?

@bigdaddykurt Given how you type, why am I not surprised that you're adverse to listening to someone else explain something?

ok that was good info regarding wings, but what about thighs or breasts? How long will those take? Longer than 8 minutes?
CearaQC 1 year ago
@CearaQC Anywhere from 10 to 12 minutes for the remaining pieces depending on their size. The internal temperature of the breasts should read 160, and 180 for the thighs and legs. Hope that helps. -Kirk

um..... that song is a little offensive for the people that live down here
knuxfan23 1 year ago
@knuxfan23 I don't understand why that song would be offensive to southerners. Please enlighten me. You are the first person who's expressed that and I'm interested in hearing your thoughts. -Kirk

@Egcuisine I mean a WHOLE bunch of tv shows stereotype people from the south to be all country and cowboyish
knuxfan23 1 year ago
@knuxfan23 While a lot of TV shows stereotype the south, I'm still not clear how the music chosen for my video would be offensive. In no way was it making fun of anyone, nor does it send the message that it's the only type of music listened to in the south. I love the south. Just returned from Nashville where I heard all types of music, including the type I used in the video. Nonetheless, I'm sorry you feel that way.

white people suck at southern food

EXCELLENT recipe-video, Chef! Great dissemination of all the info any would need to know to replicate true American Southern fried chicken, & also what to serve with it for a Southern meal. The only lack I see is that many people outside of USA don't know about or don't have access to buttermilk - the key ingredient.
BUTTERMILK:
The most common substitution is the following:
1 cup buttermilk = 1 cup milk + 1 Tablespoon vinegar or lemon juice; set it aside for 10 minutes.

@WorldLovePeace1 Thanks for the kind words and good call on the sub. You can also use evaporated milk or plain yogurt in a pinch. -Kirk
