  • I followed the recipe to the letter. Except I used chicken legs. He did say to use wings. Not sure but It must make difference. Anyways I tried it and it was ok, not great. Not worth the extra effort. I may try again with the wings just to see.  You videos look and sound really good. Great Job on that !

  • I'm from Georgia and this is almost EXACTLY how I make mine. Except I let it sit for about 30 minutes after flouring. And I do NOT use oil, I use shortening because when the chicken's cold (leftover), it doesn't get soggy.

  • My dad recently taught me how to make fried chicken... I've been making it any chance I get. I don't do an overnight soak, what I do is to put it in egg, flour it, dip it in the egg again, flour it again, then put it aside. There are many ways to make chicken people. Just because it's "southern chicken" doesn't make it the best.

  • You know how to fry, oddly you would be surprised how many ppl have no clue how to do this, it takes patience. I always did the seasoned flour and brined my chicken, but I think I will try this method too.

  • @darrylhaynes No I didn't. Real southern fried chicken is a shallow fry in a cast iron pan, not a deep fry where the chicken is suspended in oil. Chicken prepared in a shallow, dark pan will always come out a shade or two darker. -Kirk

  • I love chicken wings.. you can't be a beer drinkin all American and not like wings.. Chicken Breast sucks because it is DRY like the sahara desert. Lacks moisture and flavor... Even on Thanksgiving... that part of the turkey is DRY than a 80 year's woman's vajay jay after menopause.

  • @Gutsyndicate Boiling first would most likely result in overcooking the chicken, especially the breast pieces. I have had fried chicken that was lightly smoked first, which was delicious. But, I'd stay away from parboiling before frying. -Kirk

  • Wait. From that fried chicken seasoning, what do mean by "part" of an ingredient? Do you mean by teblespoon or teaspoon?

  • @xxCrazyKid It can mean teaspoon, tablespoon, or any other measurement. The purpose of giving the recipe in "parts" is so that you can make as little or as much of the seasoning as you wish. Let's say a recipe calls for 2 parts salt and 1 part pepper.  You could use 2 tablespoons of salt and 1 tablespoon of pepper, or 2 cups of salt and 1 cup of pepper. Think of it as a ratio. Does that make sense? -Kirk

  • @xxCrazyKid I usually make very large batches and keep it in tupperware. When I need it, I load up my pizza shaker and I'm good to go. You can use this seasoning on lots of things so helpful to keep it on hand. -Kirk

  • @pepperannziggi I totally agree with you. I'm a big wing and thigh fan. Legs taste great, but contain a lot of cartilage. Breasts are fine if you're looking to cut the fat, but they lack in flavor and must be cooked perfectly in order to keep them juicy. Thanks for watching the vid. -Kirk

  • I used the techniques from this video when I made my first successful batch of fried chicken legs a few weeks back. I forgot the salt and pepper in the buttermilk that time, and I use my own seasoning blend: paprika, salt, pepper, a "soul" seasoning blend I found at a discount market, garlic powder, onion powder, and sage. Came out great. Tomorrow I'm doing it again, but this time with wings. You should try it in cast iron, with a lid; I use a deep pan and don't turn quite so much.

  • @CearaQC Anywhere from 10 to 12 minutes for the remaining pieces depending on their size. The internal temperature of the breasts should read 160, and 180 for the thighs and legs. Hope that helps. -Kirk

  • EXCELLENT recipe-video, Chef! Great dissemination of all the info any would need to know to replicate true American Southern fried chicken, & also what to serve with it for a Southern meal. The only lack I see is that many people outside of USA don't know about or don't have access to buttermilk - the key ingredient.

    BUTTERMILK:

    The most common substitution is the following:

    1 cup buttermilk = 1 cup milk + 1 Tablespoon vinegar or lemon juice; set it aside for 10 minutes.
