For this and most videos I create, I use AVS Video Editor. It is simple to use and can be quite effective if you use your head a little. It also encodes video very effectively (giving 1080p videos in nice compact files).
The best video editor I can recommend though would have to be Sony Vegas Pro. I love it but I can't work out how to encode 1080p videos without the file suddenly becoming 2 GB.
I am considering however, using Vegas to make the videos then compressing them with AVS.
