In Memphis try Rendezvous or Central BBQ. This may be blasphemy but you should head over to Nashville and hit Jack's. The Chatanooga area has Smokin' Ed's. I'm a huge fan of both.
I live in California and the best place I can find out here is Logan's Roadhouse. Everytime I go to Tennessee I eat lots of ribs. In Nashville I like to go to Rippy's BBQ It's right downtown.
I was just wathing a video on Interstate BBQ in Memphis. I will probably try them out in June when I go back to Tennessee.
I like Big Bob Gibson's in Huntsville Alabama the best !

I like Corky's BBQ. I was there in December. I would give them 5 ribs.
