  • instead of soaked wood chips, could you just burn whole logs?

  • you could but chips are more efficient. You can control the amount better, and they burn faster.

  • Just don't use soft woods, like pine. You'll wind up with a big tar-y mess, then. Whole, damp hardwood logs should be fine, though.

  • Yes and no. The meat was raw, yes, but jerky is always raw- it's never cooked. The acid and salinaty of the marinade effectivly killed ANYTHING living in the meat though, so it may as well be cooked. Never heard of Steak Tar Tar?

  • Have been making this recipe for a year now, and have no trouble with it as is, although I increase the amount of soy and worcestershire to 1 cup, and the other ingredients accordingly. I alternate b/w Hickory and Mesquite Liquid Smoke. Have never had a bad batch! Not crazy about using flank steak because of the fat content - prefer London Broil, and even center cut sirloin. I am so glad to be able to do this, and my husband and I both LOVE it!

  • the drying process goes faster if you flip the filters half way through.

  • i tried the recipe and didnt turn out so great....ease up on the worcestershire sauce (too much makes it taste and smell like feet) and the soy...but add salt to make up for it...it can use a little more liquid smoke...but just a little........and also a little extra heat...i tried my revised version and it was awsome

  • Depends on how much you like Worcestershire and Soy, I love the stuff so I found this recipe amazing, but it's all personal taste.

    I might try your way next time though, I was definitely looking for more smokiness and who doesn't want more heat?
