Will riffs on crossing social norms with his comedy of course but his style is not with the same degree of intensely unrelenting manic energy. Its a conflict between wanting to be respectful by mirroring someones level of enthusiasm but being uncomfortable or exhausted with such display of extroverted energy.

If you are female this may be one reason the psychology of this interaction is eluding you (differences in communication styles among genders, or perhaps it is cultural). "Lets be serious" is a very direct request to conserve energy by requesting conversation which is less a constant demand for creativity and showmanship and a more relaxed exchange of thoughts and ideas.

Its like a request to take a break to rest while running because you don't have the same level of cardio as someone. For some reason or another Russell has difficulty in appeasing this exhaustion. Again, Will likely hates to request such a 'break' because he wants to be polite by meeting his level of enthusiasm but he also doesn't want to have to be excessively 'fake' by pretending to feel something hes not.
