  • i dont know if i put in the probe right this time. its only been an hour and a half and it already says 135

  • dude. you ARE awesome!!!!! everybody LOVED my turkey last year. Going to do the same thing this year!!!!!!!!!!

  • i used one of those thermometers last year, totally works

  • Alton Brown likes flat racks?

  • The first time I did this recipe the turkey came out perfect. No one expected turkey to taste so good. As far as I'm concerned this is the only way to make thanksgiving turkey.

  • Charlie's Angels and detective work... Ya gotta love Alton!! He makes cooking not only bearable, but enjoyable!! Thanks for making my Thanksgiving!!

  • my mom makes the best stuffing an yes it goes in the butt no one has ever got sick an this has been done in my family for 50 years back !dont be afraid to stuff

    your turkey..

  • @cherd1971 Yeah, I agree it's pretty much safe. But, honestly, it does nothing for the stuffing and nothing for the bird. After stuffing it with aromatics and herbs, I'll never do bread stuffing again. I usually use citrus fruits, an apple, onion, etc. It's kept the meat more moist, and left really good flavor in the bird. If you want a bit of crisp stuffing, which is the only difference (the bit just outside the bird), throw it under the broiler very briefly. Better bird and same stuffing!

  • @cherd1971 Probably because you've had shitty turkey. But some good ass stuffing.

  • This is awesome. Thanks so much! I am going to cook a turkey for my family for the first time this Thanksgiving. This is super helpful. Also, I love your brine recipe. :)

  • I didn't do the brine steps or the cooking foil triangle. I did pay close attention to seasoning, weight, meat temperature (via a thermometer). I did let it rest under a foil tent. This was the BEST turkey (lots of flavor and moist) I ever made. I recommend this process highly especially if you're a lazy cook -- such as myself.

  • Way to shit on my thanksgiving :(

  • Why's that?

  • i'll watch good eats any day.

  • i like stuffing but not when it has been in a turkey's butt D: ew
