The first time I did this recipe the turkey came out perfect. No one expected turkey to taste so good. As far as I'm concerned this is the only way to make thanksgiving turkey.

@cherd1971 Yeah, I agree it's pretty much safe. But, honestly, it does nothing for the stuffing and nothing for the bird. After stuffing it with aromatics and herbs, I'll never do bread stuffing again. I usually use citrus fruits, an apple, onion, etc. It's kept the meat more moist, and left really good flavor in the bird. If you want a bit of crisp stuffing, which is the only difference (the bit just outside the bird), throw it under the broiler very briefly. Better bird and same stuffing!

I didn't do the brine steps or the cooking foil triangle. I did pay close attention to seasoning, weight, meat temperature (via a thermometer). I did let it rest under a foil tent. This was the BEST turkey (lots of flavor and moist) I ever made. I recommend this process highly especially if you're a lazy cook -- such as myself.
i dont know if i put in the probe right this time. its only been an hour and a half and it already says 135
