come on there are so many parameters that defines the time.
e.g. the species of pig, the quantity of pork bone marrow in the bone, the volume of water, the type of spice you put in the soup (type of spices used are always the top secret in any ramen shop)
different parameters will define different time, so have fun experimenting

I realize this may be an ignorant question but I'd rather ask then assume and be wrong but.....
Are all these top 30 Ramen Shops specializing in only 1 kind of Ramen or are they like soup kitchens and have several different kinds?

@LegendaryGoldDragon yeah they are different. They introduced all the 4 main Ramen-styles: Shio Ramen,Shoyu Ramen,Miso Ramen and Tonkotsu Ramen
