Their biscuits were fluffy and rose much more than mine ever did during baking, and I was wondering how think they patted the dough before baking ... it must have been over 3/4 of an inch. I never overworked my dough, but my biscuits never rose over 2 inches think. Have any suggestions for me ? Thanks :-)
@Violette1755 What kind of baking powder are you using? Try using Clabber Girl, it reall can make a difference. Also you can use self-rising flour. Some people swear that using a sharp-edged cutter will make them rise more as using a glass can seal the edges a bit. But these here look good.

Those biscuits do not look good at all any normal person would knead the dough that wouldnt make it tough and they look dry because you didnt brush the top with a milk and egg mixture

Actually most home cooks do not brush with milk and egg, I have seen that done with scones. The mixture would not add moisture anyway only enable browning and typically it is one or the other. Also biscuit dough is not kneaded like bread unless you want a tougher texture, the idea is not to develope gluten as you do in bread. Maybe try the recipe and brush butter on to add to a softer top. Btw how many biscuits have you made?
@chumboy87 I think they do that in the north. ;) A little melted lard on top is all you need. (And in the biscuits, instead of butter if you wanna be really authentic about it but most people use crisco nowadays.)
@pastryparrot1 No problemmo, We can't get biscuits in the UK, no supermarkets sell them (not even "make your own" kits) fast food chains like McDonalds and KFC don't either, so I have to make them myself :(
Buttermilk is a bit of a nightmare to get here too, I've substituted it with regular milk and it's come out fine!

If you are like me I don't drink buttermilk so unless I know a head of time I am making something with it's never on hand. What I do use is a product that is dried powder form buttermilk the brand is Sasco and can be found in your baking isle. It actually has cream in it unlike buttermilk that uses skim milk so your baked product comes out even better tasting. I swear by this stuff.They have a site online at sascofood. Just make sure you refridgerate after opening
Have you visited their website? Has some awesome recipes and many blue ribbon winners. Sasco also makes other products but I haven't tried them yet. Try a couple tablespoons in your dry cake mix next time you make one, you won't believe the texture and the taste.

No, these bisquits are not done right. It is obvious that they will crumble in your hand, not light and flaky. I lived up North for awhile and this is how they make bisquits. WRONG. There are a lot of recipes on youtube for Southern bisquits. Check one of those out. If you think these are good you don't know what you're missing.

Man, This is the best biscuit recipe I have ever found, the flakes melt in your mouth, I have made them three times now, and I have never made home made biscuits before, always store bought. But thanks to her I will never buy a store bought buiscuit in a can again! You have to check out this nice ladies recipie for biscuits and gravy, I made them at work and now I am the man! @DoshUnScripted I don't know what the weight if the raisins would do to the rising of your biscuits. However, if you were to ass them I would add 1 tsp. cinnamon to the flour and process it with the butter. The raisins would have to be folded into the dough before you spread it out to cut them. @ThatKitten If you use milk instead of buttermilk, just don't add the baking SODA. You won't need the extra acid from the soda if not using sour milk.
These biscuits are at their best the day you make them. They will be OK the next day. Store them in an airtight container. However, if you can make them that day I would highly recommend it! Merry Christmas!

Question -- I've heard you can substitute 1 cup of regular milk and 1 tablespoon of lemon juice for 1 cup of buttermilk if you don't have buttermilk. Do you think that'll be alright? Oddly enough, my local grocery stores don't have buttermilk.
OK, what you need to do is put 1 tablespoon lemon juice or white vinegar into a measuring cup. Then you add the milk until it reaches 1 cup - so you need a little less than one cup milk. Let it stand for 5 minutes and then use it. That should do the trick! Have a wonderful day!

Is it necessary to bake the biscuit at 450F vs 350F as in other biscuit recipes?

These biscuits are at their best the day you make them. They will be OK the next day. Store them in an airtight container. However, if you can make them that day I would highly recommend it! Merry Christmas!

Oh man, these look awesome. I may just make these instead of buying a package of regular dinner rolls at my next gathering haha!
Question -- I've heard you can substitute 1 cup of regular milk and 1 tablespoon of lemon juice for 1 cup of buttermilk if you don't have buttermilk. Do you think that'll be alright? Oddly enough, my local grocery stores don't have buttermilk.

OK, what you need to do is put 1 tablespoon lemon juice or white vinegar into a measuring cup. Then you add the milk until it reaches 1 cup - so you need a little less than one cup milk. Let it stand for 5 minutes and then use it. That should do the trick! Have a wonderful day!

It appears that my first reply did not go through! I hate when that happens! Anyway, go ahead and place 1 tablespoon white vinegar or lemon juice in a measuring cup.
