For tpersons that doesn't understand a minimum of service this may be a good video. But for people who studied Sommelier this is a shame to our profession...
A fun, and well video'ed. I loved this information and it's presentation. The only bug was the audio. Way too much ambient noise. Use an external shotgun microphone or Azden wireless mic system... then bingo. No outside crowd noise. Good job on the video though. Other comments on this page are bogus and too high brow!
I tell people at work that I'm on a quest to find a $9-$14 bottle of wine that tastes like it cost $300. They laugh at me, yet I still haven't given up.
I honestly don't get why all these wines I've been buying taste like piss. I mean like what's the big deal about taking a quality grape seed and nurturing it ... and selling it at a sensible price?
It's My wine; it's MY cork. If I wanna smell the cork, I'm gonna smell th cork. One of the most wonderful smells in the world is the combinatioon of wine and cork. It's nature and innovatiobn and it's best !
wrong wrong wrong......people should get educated before doing this kind of errors.....please do not even take this video in consideration, real pro sommeliers do not act like this!!!
i agree with pooky. this gut is no pro, nor is the person that made the vidieo. All should disregard this video, and if you have any questions talk to a REAL sommelier. What about TCA which can be blatantly apparant ON THE CORK, but maybe not so much in the first sniff of the wine. The cork can can be an indicator, not how good the wine is but of the flaws that are sure to come as the corked wine is exposed to air. If you don't know what TCA is look it up , or again ask a real sommelier,
OMG... of this is a sommelier??? Than i will quit my title... FCUK... this, to present the cork is: point 1. make sure the cork comes from the same btl.
point 2: vintage/ brand/ winery, point 3: moist/ok/ crystals?? ?( please - educate yourself, don't offend us) crystals = sugar... again OMG...( again, please go get yourself educated and than claim that u are a sommelier) please disregard this video.. is an offense to all the sommeiler guild!
to pop the cork... ooohhhooo.. extremely unprofessional... as a SOMMELIER you should be able to open a btl of wine or sparkling wine without popping the cork.
@franchiny1225 : Point 1. The wine service should be an exquisite and elegant procedure. Nor a firework and new year champagne celebration. Point2. In case the wine is old, the cork is old as well and a old cork ( the way he opened the btl.) will not be able to hale the abuse - so the wine server will end up with a broken cork and a with a big challenge to open the btl/ remove the other part of the cork.
I wouldn't trust this, according to Italian methods. Every country/even region will do it differently but this method doesn't even make sense. Everybody has their own way to skin a cat. There is no logic to not smelling the cork, it helps. There's also no logic to decanting a bottle of wine that has no sediments/doesn't even need to open up. The wine will open up in your glass and you can smell/taste the evolution while it happens. There isn't one set time when the wine is at it's best.
Yes there is, by decanding a wine for a few hours before service, especially a young wine, you are allowing air to mix with the wine. This helps reduce the harsh alcoholic flavours you can somtimes get with a young wine and help you fully appreciate the flavours of wine. Before you run me down experiment. Buy 2 cheap bottles, decant one for a 4 hours anf keep the other sealed until you are ready to taste. if you cant notice a difference then you shouldnt be commenting on this video.
you sound like a pretty big wine snob. snobs are what's wrong with the industry. However, I agree that it will change the wine if you decant it. I think that in order to experience the wine at that particular stage you drink it as it is, then you can taste the evolution a year or two later. Decanting a young bottle is like kissing your sister.
Snobbery has nothing to do with it, its about wanting to experience the very best a wine can offer. Its like buying an off-road vehicle and only driving it on highways, it may be a good vehicle but you are not experiencing all that vehicle can offer, for that you must take it off road.
Its the same with wine - yes, you can drink it straight from a freshly opened bottle and yes, it may be nice, but you are not experiencing all the joy that the wine can give you. For that you must decant it.
Experts with the American Cancer Society and the American Heart Association say that though these studies do show some benefits to moderate drinking, the health risks from alcohol consumption far outweigh the potential rewards.
" They ask you "Muhammad", concerning wine and gambling. Say: "In them is great sin, and some profit; but the sin is greater than the profit. " The Holy Quran 2:219
Isn't the cork placed to the right of the host done as a tradition, harking back to the days when people would falsify the wines by removing the good stuff and replacing it with lower quality wine? The name of the maker is placed on the cork to ensure authenticity?
u need to bring the bottle on the side plate and paper napkin on the neck of bottle and dont leave the cork on table cloth its better on side plate.keep table cloths clean my friend.
He is definitely not a sommelier but an experienced server that got promoted and was the only one available for the video

@twopintsdave I noticed. Wine fresh from the bottle seems to have higher alcohol content.

bottle doesn't have a saucer, cork doesn't have a saucer, pops cork...why decant wine that is standing straight up? hello sediment soup.
laxballdmw 3 years ago 5
You decant to let it breath. And in an upright bottle, the sediment will be at the bottom and is not poured into the decanter.
