I think the best way to balance religious beliefs w/ scientific knowledge is to accept your ancient texts are wrong about the natural world. Not the idea of your god but the text written by the ancients. Is it possible Judaism could still be true? Yes. Is it possible it could be wrong? Yes. I think the big mistake the scientifically literate religious people make is trying to fuse the two together.
Science is in fact religion's opposite. Religion gives the illusion of spiritual guidance and the vain hope that someone higher up will make things better. Science is when man says "Fuck it" and goes at it himself, and discovers his true capacity for knowledge. Also, the Jews are in science because they know the benefits it has. They're damn good businessmen, they know what they want, and they know how to get it (can't say I'm too pleased about it outside the scientific world though...).
