  • Its hard for me to find miso paste and dashi, even in specialty asian stores in my city.

  • I was son enthusiastic when... Dashi, miso paste, wakame. A lot of japanese dishes have dashi in them. Anyways I'll have to look for those ingredients maybe I'll get lucky.

  • @alsepang Either red or white, it's just a matter of preference. There is a little flavor difference, I always thought that the red tasted a little stronger. I would say try them both and see which you like better.

  • I was able to find all of it but the dashi at a local supermarket. The miso paste was not an easy thing to find in the store but it was next to the tofu and I just didn't know what exactly I was looking for.

    I would suggest adding in some sliced mushrooms if you like, I love mushrooms the most in the soup.

    I've been using dark red miso, boiling the spring onions in the dashi and no wakame ^^;

    thats what happens when ingredients are hard to get and recipe like yours not available. ^_^

  • @pimpinalday89 No, but for real miso you should use it. Tofu isn't all bad.

  • I really dislike the tofu in this dish, I've started to use leek and potato personally - The seaweed is still very nice. But I have also found a small pinch of chillie powder gives it a nice warm kick in winter. Not very authentic but still very nice - Give it a shot if you're bored with tofu :)

  • @TheNonfat I ate misoshiru without the dried seaweed and probably without dashi too.

  • The type of miso is up to individual taste. It's like cheese or wine. They are all different and all good. The general rule is the darker the miso, the stronger and sharper it is. The lighter the miso, the milder and sweeter it it.

  • @XpresloX would that be like making leek and potato soup without leek or potatoes. If i was a betting man, i wouldn't put money on it. Tough here in Wales we have Dragon sausages that have no dragons in them, so, who knows?

    I know that these two are the basis of incredients soup, but its too hard to find that in asian grocerie, i didn't still find Japanese grocerie in my town

  • @XpresloX maybe you could buy it online. If this isn't possible i'm sure there is an equally good elexir that can be made from ingridients you can buy in your town.

    Miso soup taste very good, everytime i went to Japanese restaurant, i alway commented 1 miso soup :)

  • I eat this all the time. Adding boiling water to miso paste is bad though as it kills some of the bacteria (the bacteria that's good for your gut). Let the dashi/stock cool first before adding the paste.

  • why does no one explain which type of miso to use? I know all kinds can be used, but does anyone know what type is used in restaurants?

  • @VampyreShonda Most restaurants use shiro (white) miso and aka (red) miso. The white varieties aren't really white, but are light yellow and have a sweet taste. The red varieties are dark brown and are salty.
