@ThaEazyLife211 Yes, I was referring to Laotians. You haven't eaten with every Laotian family in Laos. Not everyone eats the same dishes because there are local dishes that are only available in certain regions of Laos. It seems that there's more of Laos that you haven't discovered. You should make more friends in Laos and hopefully one of them will make that Laotian chicken dish for you. It's really delicious. You should also try Laotian yellow rice.

If I would have done it the traditional way:
that is stuffing the bird with the rice, then simmering the whole chicken in the coconut milk.
You still have the skin and bones.
But I cut the bird in half and served the rice separately, leaving the skin on to make it as more traditional.
Next time I will take the skin off for less fat, but then I don't worry about my weight at this point in my life.
I wish that I had added more fish sauce to the braising coconut milk.
The taste was great!
