@TheUnchainedMind Most of time-lapse photographers use homebuilt/custom camera dollies and booms. They don't take much work to build, but it can take a lot of time to tune them!

@TheUnchainedMind im a total non-professional but...the moving effect can just be done by some video-editing-software, can't it? zoom in and out or reduce the size to one spot and move from left to right or something

Yes, I later realised that this was done in post production by zooming in and moving the frame across the picture stream. There are however time lapse movies where they do move the actual camera to get a better shot. Search for Vancouver city time lapse for a really spectacular one.
