I just don't get it. You pour vinegar in the hot milk and then you "filter" it immediately after coagulation. I don't see why this should take additional 2 to 3 hours....
Ricotta is made by cooking (ri-cotta, re-cooked) the whey left over from making sheep's cheese. Trust me, I know what I'm talking about: I'm Italian and my grandmother has been making ricotta for decades.

thanks, next time could you do away with pouring everything. I understand how much 3 tablespoons and 2 cups are :) It will make it go faster

Sorry, but this is not ricotta. Real ricotta is made simply from the whey. You just made some kind of soft cheese.
