First of all Pastrami is not made of Pork. Besides being open on Saturday,I don't think the meats are kosher.Meaning they haven't been slaughtered ritually.That is an entire procedure involving a special humane technique and removal of all of the blood.
Many muslims consider kosher meat halal (permissible) others considerit haram (forbidden)as the animal is slaughtered by a Jew,which for centuries,Muslims have been unable to tolerate.While no pork is served,the beef at Katz's is not kosher.
Animals slaughtered for use as kosher meat are not bled to death. Their throats are cut in one swift movement with a very sharp knife. The knife is examined between each slaughter so as to insure there are no nicks in the knife. A nick could cause the animal to suffer.
Once dead all blood is removed. Kosher meat cannot have any blood however, an animal that is bled to death would not be kosher.
Ah.. Well I believe that with Halal then the blood is removed by cutting the artery and letting the heart pump the blood out. Bleeding to death then. So maybe I confused that with Kosher. I'm off to New York in a week can't wait to try a Pastrami!
