  • awesome awesome awesome! you are missing one key ingredient my mom adds...red wine vinegar! she mics the broccoli until it gets soft, adds salt, garlic, red wine vinegar and evoo last as to let the other ingredients soak in. she lets it chill in the refrigerator for a half hour or so and then its mangia time! best broccoli dish in the world!

  • Hi Keith! I love this dish - made it many times since I first saw your video. Unfortunately, I have to be careful with the salt b/c of personal health issues. I've tried to use fresh squeezed lemon juice in place of the salt, but I'm not sure I like it as much. Any suggestions on seasonings for those of us who have to limit their salt intake?

  • You NEED to have some fat in your diet. The olive oil is a great fat, and a little clarified butter is not going to hurt you. Thanks for the recipe, It sounds delicious!

  • The way I like my broccoli is cooked is boiled. No oil, just boil it with water. Also, I chop the broccoli to smaller pieces so that they are easier to eat.

  • Keith I really enjoy your videos. Broccoli is one of the few veggies I enjoy and this is a nice way to add some flavor to it. THANKS

    I really enjoy the flavor of the broccoli that most Chinese restraunts all seem to have with either chicken or beef. There is a light brown sauce that coats the broccoli that I cant seem to duplicate. Any thoughts on a good way to possibly duplicate this? I know this seems simple but I cant get the flavor or consistancy and the Chinese wont tell me. LOL

  • @wreckanchor ... garlic, olive oil, salt pepper, onion powder and soy sauce ... probably msg as well if you are getting at a chinese restaurant

  • @Keisuke995 Margarine is about the most unhealthy thing you can eat. It consist of hydrogenated fats that's been hardened (through the hydrogenation process), bleached and flavoured. There's nothing natural to it plus the process creates trans fats.

    Olive oil, rapeseed oil and butter are about the only fats I recommend using in cooking and baking.

  • i tried this but using canola oil instead of olive oil and butter.. but although the results were tasty, I didn't actually get that much garlic flavor out of the dish. What's the key to this? I thought at first I didnt cook the garlic enough in the oil (didn't give the oil enough time to extract the flavor from the garlic) but looking at this video again, I cooked it about as long as you did.

  • @keithsnow when i was younger, never, but now my faves are broccoli, caulie flower and brussel sprouts, my mom kicks ass when she cooks. i am really lucky, specially with broc. and caulie soup she makes based on a big slab of beef..... cheers everybody.....

  • i only eat my broccoli with butter on it, have done it that way since i was a little kid, and no i am not fat, i am very thin. this really tastes great!! i also roast some nuts and mix it in with it. simple, fast, and goes great along side of a steak and glass of wine.

  • love it with just butter too...and now that we are in fall, I make a broccoli casserole with onions, cheese etc.. really tasty..

  • you got me in a broccoli mood now. i think im going to make a broccoli cream soup. with some onions, carrots, little garlic, some chicken stock, broccoli, parsley, pepper, then puree it and add some heavy cream at the end.

    Thanksgiving is just around the corner, are you going to do a show on cooking a turkey?

  • My apologies for the rather personal tone of my comment, that was very rude of me. However, I will take a look at Tim Ferris' blog, as to me, it sounds highly controversial that the accepted facts about saturated fat are a myth.

  • no worries...check out that article...I have been researching sat fat for years...conventional medical wisdom...and the wisdom that gets the most press is anti-sat-fat...however there are more and more credible people coming out against the low-fat and sat fat myths..

  • It is a well known procedure to mix olive oil and butter, in order to lower the butter's boiling point, and to avoid butter to burn which it does quite easily, and which spoils the entire dish. Other than this, you are way better off with half-blanched or steamed home-made broccoli on tons of butter, than a quarter of a mcdonald's burger. The broccoli will only suck up a certain amount of the fats -which will give it the unique taste - and the rest stays in the pan. Don't worry, humans need fat!

  • No,I'm sorry dude,it is pretty disgusting! "Your" broccoli will taste only like butter. There will no natural broccoli taste remain,that's sad because the natural flavour of broccoli ist fantastic!

    I suggest you find a recipe that suits your taste buds rather than whine about this one...

  • Most people would probably find the broccoli a bit too crunchy cooking it this way. Another alternative is to blanch the broccoli for one to two minutes (salted boiling water) and remove them to an ice bath. The ice water stops the cooking process and brings out an amazing beautiful green color and also softens them just a little, but still remain firm. Pat dry with papertowels and then follow the rest of the steps. In my opinion, this will yield better results in flavor, color, and texture.

  • google it, it has to do with how hot your plate is, you aren't supposed to burn or smoke up the oil...it changes the chemical composition to produce free radicals.

    Basically it comes down to if you want to die of cancer or heart disease :P

  • similar to table salt but a larger grain and typically contains no additives. sometimes known as coarse salt.

  • salt extracted from kosher pickles...midget pickles are best

  • i do my broccoli this way all the time, but i dont add salt, just soya sauce or oyster sauce, really yummy. one can also do the carrots with broccoli together.
