hmmm as interesting this video is i would definitely use fresh ingredients rather than the frozen stuff used here. By using the fresh ingredients I understand that ill have to steam or lightly fry off the veggies first. I did like the video however and i did sub

@joo6769 These noodles are NOT actually from Singapore. This is a Chinese dish that was likely invented in Hong Kong and has since become popular in America & Australia.
There is no good reason as to why it's called "Singapore noodles." It could also have been called "Indian noodles," "Malaysian noodles" or "Indonesian noodles." The inventor likely wanted to associate the noodles with a cuisine that uses curry more often than does Chinese. Singapore was probably a random & innacurate choice.
There is a Singapore Fried Bee Hoon/Singapore Fried Rice Vermicelli (星洲炒米粉)that could be found in restaurants or sold by street vendors in both Singapore and Malaysia. There are variations but only in some of the ingredients used and no curry is used. However, it is different from that shown in this video. Only the noodles used are the same.

After all, the dish is apparently very popular in Hong Kong. These folks thought it was invented there. I didn't know this variation of vermicelli noodles was actually sold by vendors in Singapore and Malaysia. That's an interesting morsel -- learn something new every day!
Reminds me of a fried noodle dish called Hong Kong Noodles/Mee Hong Kong (香港炒麵) found in Singapore and Malaysia that my Hong Kong friends swore that they had never seen it in Hong Kong. lol! Likewise, my friends from India swore that the famous Fish Head Curry dish in Singapore n Malaysia was never a native Indian dish. Some research speculated that it was actually a dish invented by a chinese street vendor in Singapore/Malaysia.
One thing though. You microwave your veggies?! Oh no! No microwaving is not necessary. Sautee your vegetables in a wok, and they'll retain their crispiness -- as opposed to becoming limp and soggy as microwaves typically make them.
I like some of the things you do here, particularly the brown sugar. Your recipe is a little different than the way I make it. I use the Chinese "pass through" method to cook the shrimp and chicken. I "pass them through" 300 degree vegetable oil (healthier than butter or lard) for about 45 seconds. This "pass through" technique cooks them just enough so that when they're sauteed with the vegetables, they don't need to do any actual cooking, but rather accomplish flavor mixing at that stage.
@cocofoshoshoable The local grocery store by me has them in the ethnic section (near the soy sauce.) Also, most oriental grocery stores carry these as well :)
I usually just buy some chinese BBQ pork instead of cooking the meat and just put it on the noodles. Sure chicken breast is healthier but BBQ pork with half and half taste good for me.

For 4 I would just add another chkn breast, 5 more shirmp, and just about 1/3 more noodles. Keep the marinades the same, and then just double the sauce :)
I made this recipe the other day, but because I am a vegetarian I eliminated the chicken and shrimp, but boy did it ever taste delicious, I substituted tofu! YUMMIE!!!
Haha, i'm a veggie too and man did i get a surprise the first time i cooked this dish. I actually make them with fish sauce, soy and chili powder. Gives it more of a kick, especially when eating them cold the next morning :P
Is there a specific reason you used a frozen vegetable stir fry mix instead of fresh vegetables? I've never seen frozen vegetables used in Chinese dishes...especially Singapore Noodles (I'm Chinese).
Hi Lila, There are such noodles in Singapore but i think yours just different version. In Singapore, it is usually called Fried Bee Hoon, served all-day but most ppl like to have it for breakfast.
I get these delicious Singapore noodles at one of our favorite restaurants here in Sydney. Have tried to cook these before but never succeeded, so happy to have recipe now, I trust it will be great, will update you how it went when I cook it. Many thanks. @other100a To whomever cant easily find all the items: I hardly have an asian store near me... but i made replacements that u can probably find:
vermicelli instead of rice noodles
some onion and mushrooms i sauted instead of vegetable fry mix
didnt have that chili sriracha sauce so used tabasco
It worked out perfectly, they were DELICIOUS!

This "pass through" technique cooks them just enough so that when they're sauteed with the vegetables, they don't need to do any actual cooking, but rather accomplish flavor mixing at that stage.

@cocofoshoshoable The local grocery store by me has them in the ethnic section (near the soy sauce.) Also, most oriental grocery stores carry these as well :)

I usually just buy some chinese BBQ pork instead of cooking the meat and just put it on the noodles. Sure chicken breast is healthier but BBQ pork with half and half taste good for me.

i guess egg and bean sprouts would be optional with this dish? i was back in my hometown of toronto recently and had some fantastic sinagpore noodles at one of the many fantastic chinese restaurants there (wah too). forgot how much i liked them. btw.. are you from the south? i noticed a little southern twang in your voice. keep up the good work with the videos sweetheart.

For 4 I would just add another chkn breast, 5 more shirmp, and just about 1/3 more noodles. Keep the marinades the same, and then just double the sauce :)

I made this recipe the other day, but because I am a vegetarian I eliminated the chicken and shrimp, but boy did it ever taste delicious, I substituted tofu! YUMMIE!!!

Haha, i'm a veggie too and man did i get a surprise the first time i cooked this dish. I actually make them with fish sauce, soy and chili powder. Gives it more of a kick, especially when eating them cold the next morning :P

Is there a specific reason you used a frozen vegetable stir fry mix instead of fresh vegetables? I've never seen frozen vegetables used in Chinese dishes...especially Singapore Noodles (I'm Chinese).

I use frozen mixed vegies to make it quick and easy; especially for those of us who are cooking for large families :)

Hi Lila, There are such noodles in Singapore but i think yours just different version. In Singapore, it is usually called Fried Bee Hoon, served all-day but most ppl like to have it for breakfast.
Anyway your Singapore noodles look delicious. :)

I get these delicious Singapore noodles at one of our favorite restaurants here in Sydney. Have tried to cook these before but never succeeded, so happy to have recipe now, I trust it will be great, will update you how it went when I cook it. Many thanks.
