This typically happens when the oil pick up tube is partially blocked. If you have an extension tube on the vw pickup tube, for am extra large bolt on sump, I think it has come loose and touched the bottom of the sump or the oil strainer. This would cause the pump to cavitate, losing and then regaining pressure, as your gauge shows, check that and let us all know
