  • Avocados are not ripe. Shouldn't be difficult to mash with a fork if they are nicely ripe.

    Put the avocado seeds in the dip when it is finished, it will keep the nice green collar.

  • Although she mentioned this at the end, onion is a key ingredient to have in the dish, and the best one for guacamole particularly would be green onion. Also, you don't need cilantro necessarily to make a good guac mix, a good substitute for that is quarter cup of homemade salsa or store bought (just measure in accordance to the amount of avocados you're using. Additionally, Salt and pepper is a better combo than just salt.........! So many variations, but this one sucks because no onion.

  • Pro Tip: Limes don't have seeds...Lemons do.

  • the recipe is fine, it doesn't matter how you make it, but this is very messy to do, so if you just put all the ingredients in a iploc bag and mash it around in your hands, it will be much neater. also, a way to make the presentation in the bowl look nice is cut a corner off the ziploc and squeeze the guacamole out of the tip in a swirl pattern.

  • I think the best guac is simply to mash the avocados, sprinkle with some dried garlic and garlic salt. And that's it. If the avocados are a little dry, then I might add a little lemon juice, but that's it. Adding tomatoes, cilantro etc. just makes it all runny. Stick with the basics, you can't go wrong.

  • What is this crap? It isn't guacamole! It must be American Avocado Dip! Listen girlie, I'm Mex/American and I learned how to make guacamole from my dear old long-gone Mexican granny and the only thing mexicans use tomatoe's for are to make salsa's, they NEVER put it in guacamole! And where's the chile's? Add some finely-chopped serrano chile's, not jalapeno's. Also, never add the lime until you're ready to serve or it will turn the guacamole black. Keeping a pit in the bowl also helps. Try it.

  • Probably I didn't understand your point but the lime actually keeps guacamole green, BTW tomato can be used to prepare it, but only if you don't squash avocados very much. Jalapeño or serrano chile are a must and onion definitely improves taste. If you want something out of this world when ready mix a little pork chicharron or carnitas with it and eat in tacos with corn tortillas. Celestial. Buen Provecho! (Bon appétit!)

  • I don't know if I agree with you on adding lime early BUT, the point is that it must have lime to taste right. I like guacamole in my tacos but I've never tried mixing chicharrones in the guacamole itself, I will definitely have to try it. I STILL don't like tomatoes in guacamole though! What a dull world this would be if we all had the same tastebuds! Thanks for the tips.

  • Yes, definitely lime is a must, you're right variety is basic in the kitchen so I hope you enjoy it!. BTW if you decide to try chicharron let it get a little moist from guacamole, the flavor will be something from another world specially if you get a can of jalapeños and add some vinegar and depending on your taste even some slices of chile. Yomi Yomi, tasty! How about a good Corona or Negra Modelo with these?

  • Also, I highly recommend minced onions; no smaller than a 'bb' from a 'bb' gun. Google the picture of a 'bb' it if you don't understand and go easy on the 'bitter' cilantro. That's all for my take on it. I understand everyone's tastes will differ. I'm from Texas where we take our Bar-b-que and our Guac very seriously. LOL. I've made a half ton of it in my cooking days.   • Try this: Hold it in your hand and gently break the skin at the skinny top of the avocado and roll the knife along the skin to the bottom of the fruit cutting only about 1/4 inch deep; then peel off the skin from the tip like a banana. So easy. Squeeze the parts apart and pull the seed out. A bit harder for thin skinned ones, but still the easiest way for both types, especially if you are doing more than a few of them. cont to next post for last part of my remarks.

  • It's pronounced Wok-a-mole-eee with the accent on the Wok. You really do need to put some garlic salt in it or it may just taste like a banana and garlic salt makes it taste great. Avocados don't have much flavor by themselves. Go easy on the garlic salt; you can't remove it. Just put a little and then taste it. If needed put a little more till it's perfect. You don't' want it too pureed so you may want to have the pieces marble size since you are gonna stir it several times. cont next post
