LOVE zucchini! Thanks for sharing a new way to use them. :) I like slicing them up and frying (or on the grill) them in a little butter, lemon juice, pepper and salt. Great quick side dish! Or in a potato pack on the barbeque...oh now you've made me hungry. Never thought to can them; thanks for sharing. :)
No vinegar in the brine? That's what a simple brine contains, it's also what makes pickles sour
