Rather than throwing on the herbicide, you might want to note that Burdock root, sliced and cooked, is a side dish with sushi that people will pay a premium price for. Heck, those expensive restaurants are probably importing it from Asia. It might be worth running the numbers through a spreadsheet. After all, you don't have a weed problem if you turn it into a crop.
