Really nice recipe- but if you really want the low down on spinach you should watch youtube spinach recipe by Wierdgourmet. He represents the next level in information and preparation.
Wouldn't the dairy be more stable (less prone to break and separate) if you first wilted FRESH spinach over the onions, drained excess moisture from it nd then folded it into a classic bechemel (hence the nutmeg) which becomes a morney with the addition of the cream cheese?
@Metsada007 Fresh spinach is great for salads, but when cooked, it shrinks down to nothing. A whole bag of fresh spinach will shrink down to approx 1 tbspn of cooked spinach. Feel free to ask me how I know this (laughs).
I don't get why this recipe is so hard to find on the website... a search for "creamed spinach" only leads to a picture of the spinach dish and no recipe at all.
Hi Keith Great recipe. I would add some sauteed garlic and put the finished spinach in an aux gratin dish, sprinkle with grated parmesan and bake til bubbly...but this is a good base recipe. Love your French range.....oooh lala
