  • Really nice recipe- but if you really want the low down on spinach you should watch youtube spinach recipe by Wierdgourmet. He represents the next level in information and preparation.

  • Wouldn't the dairy be more stable (less prone to break and separate) if you first wilted FRESH spinach over the onions, drained excess moisture from it nd then folded it into a classic bechemel (hence the nutmeg) which becomes a morney with the addition of the cream cheese?

  • @Metsada007 Fresh spinach is great for salads, but when cooked, it shrinks down to nothing. A whole bag of fresh spinach will shrink down to approx 1 tbspn of cooked spinach. Feel free to ask me how I know this (laughs).

  • I don't get why this recipe is so hard to find on the website... a search for "creamed spinach" only leads to a picture of the spinach dish and no recipe at all.

  • Hi Keith Great recipe. I would add some sauteed garlic and put the finished spinach in an aux gratin dish, sprinkle with grated parmesan and bake til bubbly...but this is a good base recipe. Love your French range.....oooh lala
