hi i have a dumb question have you ever done a multi layered mini cupcake before? im trying to surprise my wife because she love my baking but im having a hard time with the mini cup cakes any advise? please help
@whisper0331 I made some using almond filling. Just fill the mini cupcake with a little batter, then use a new batter. I used funfetti cake mix, put some in, then almond filling, then topped it with more cupcake mix. Keep in mind if you want a big muffin top you should fill those suckers all the way up. :)

BUT-I have been told I look like her before-and the red head on 'American Pie' too. I agree that I look like them somewhat, and don't think it's a bad thing. I have a unique look to me. I call it "Penny Awesomeness".
You can freeze buttercream icing for months in an air tight container actually. Just take it out the night before you need it onto your counter, and let it thaw. Then, whip it and use!
If you want to use icing now, you can always make or buy some chocolate chip cookies, and use the frosting as a filling between 2 cookies. Freeze the cookies to make them like cookie ice cream sandwiches, or keep them in the fridge.
It's a Wilton brand mini cupcake/muffin tray. You can order it on-line, but I believe mine is from Michael's Craft Store for less than $12.00. It was bought for me as a gift.

I love how you frosted them. Most people swirl or use the rose effect when frosting cupcakes but I like your method better. : )
