Hi Nikki,

Thanks. I just posted the recipe ingredients for my own information.

pepper (charred/peeled), eggplant cubed, sprayed w/cooking spray. Broil.

3 zucchini, peel (?), cut into strips + 2 - 3 TBS Salt, leave for 30 min

Add cooking spray or olive oil to red cast iron pot.

Add onion, garlic, 6 - 8 cloves of garlic, cook til trnslucent. Add 15 oz can tomato sauce + salt & pepper. Simmer 15 min.

Pull & peel & seed the peppers.

Then drain & squeeze the zucchini (squeeze by hand)
