My brother in-law is an excellent cook/chef. He went in the Navy at 19 and cooked on an aircraft carrier for 4 years. Navy chow (at sea) is actually excellent. When he got out of the Navy he spent a year in LA county jail (oops!). He cooked in Jail and learned a lot of his skills there. He's now in his 40's and has made a great living as a cook or chef at many restaurants. Don't judge all criminals, most are guys like you and me who made a mistake along the way. Jail schools are helpful!
Let's say you skip out on your taxes and you have to go to prison for a year. On paper that doesn't sound so bad. Now, instead of prison, think of it as "a concrete box where you get raped every day."
Oh, and you're a felon now so your future is screwed forever in terms of job prospects.
I've had a Kobe Beef Burger with Egg Truffle Salad for $40. It was really damn good, mainly because of the Egg Truffle Salad. That gold leaf stuff they sprinkle on is probably where most the price comes from.
