To those that are wondering about wouldn't it be more humane to just cut the head off, the surprising answer is "no." When you cut the jugular the animals lose consciousness almost immediately, and it is really a lot better overall. This is the traditional biblical way (as he said), and it is also the same way an animal is butchered for it to be kosher and halal (it's the same in Christianity, Judaism and Islam). That isn't necessarily why it's better, but it is an interesting thing to note.
@candlewick96 It seems that the debate is weather or not they are actually dead after you do so, most people seem to think that because is flaps and thrashes that it's not actually dead, but we will never know. I don't see a grant being given to a lab to find out weather or not chickens suffer.

If you're careful with the knife you can slit the gizzard open down to the membrane and carefully peel the gizzard away from the membrane. If you cut through the membrane it creates more work and mess. Something else, chickens don't have a craw, it's called a crop. Maybe calling the crop a craw is a southern thing, but it isn't correct grammar...
happier chickens are far tastier :) i know that a happy chicken will have had a good life natural is better. Its so cruel the way they get killed at chicken houses or whatever they must be so sad! this is okay the chickens have had a life to run around.
U just wasted valuable blood. U can actually boil the chicken blood and eat it. It tastes like scrambled boiled egg. Put spice in blood before boil will make it tastes better. It is like boiling scrambled eggs mix with spices and other ingredient. Make a video of it. #LOL

Good video, but I don't understand how slicing the jugular is more humane than cutting off their head (say with an ax and chopping block). Wouldn't the severing of the spinal column eliminate any pain?

I'm glad to have come across this video. The process is identical for game birds / waterfowl, only the side of the bird varies. Nothing frustrates me more than the folks who take a Canada Goose or a duck, breast it out, and forget the rest because it's too much work. Hopefully more people will watch this, and realize it's not that hard to do!

@ILOVETHICKBITCHES Look at the way the muscles are. Judging by the fact that the breasts and legs aren't swollen the way they are in the super market they are at least free ranged. And by the way organic doesn't mean much. Some of the organic alternatives are actually worse than the non organic ones.

@deeisneat Well you got to understand how a chicken works. You can cut it's head off and It'll still run around. Best to bleed it out and let it die in a few seconds then a few minutes. Also guessing it makes it easier in the cleaning process but I'm not sure on that.

@mikenco Just skip the word pluck and think more in terms of wiping or rubbing the feathers off. In the end the last few feathers that remain on the wingtips and some of the hard to get places can be pulled out or scraped out with a knife. It is by far the worst part of the whole operation.
Hardly anyone in the UK would know how to do this (relative to the number of people). But I live here and I want to expand my land and keep chickens and maybe pigs too. I don't have any problem killing for food. I've done it with fish, pheasants and rabbits, but not chickens yet.
@Enderwiggan1 The old testament is full of ancient wisdom that most of us take for granted. Example- washing your hands before a meal, not allowing open sewers and much much more. Today we live like these things are common sense but you go to a place that has open sewage running down the street and then you begin to realize how much our civilization owes the old testament and all it's wisdom. I'm a vegetarian, (mostly because I think it's wrong to eat animals if you're not willing to have their blood on your hands) but have often wondered what I would do if I was ever in a situation where I had to kill something for survival. I'm glad to see there are people concerned with limiting the animals pain and suffering. I was surprised, the chicken seemed quite calm until the end when it flapped around a little bit. I guess I could do it if I had to, I'd cry like a baby though.
@JayKay62969 Hi. Southern farm people that I know would never want an animal to suffer a slow death. From a Christian point of view your food is a gift and blessing from God. Not taking care of an animal by allowing it to suffer for lack of water or food or other mistreatment is considered a sin akin to laziness or drunkeness or worse. I don't see animals the way walt disney sees them. They are not created in the image of God but created for our proper use. The only emotion is thanksgiving.
@rtlmf cont. I really have no problem w/ hunters and those who raise farm animals. I do have a problem with commerical farming. I've been a veg for many years and most meat eaters will admit they couldn't hunt for or kill their own meat yet they have no problem with supporting an industry that thrives on animal abuse! As for the crying, I've never HAD to kill anything, it would be VERY upsetting. Taking life is a very serious thing (at least to me it is). I'm female btw.

@rtlmf Alien? How so? I think we are actually on the same wavelength. Except for the part about them being "for our proper use", I think they serve their purpose merely by existing. I also don't believe animals are w/out emotion. They may not express it the same way we do but that doesn't make it less significant. I have 5 cats and used to volunteer in a wildlife shelter so I've spent a lot of time around animals.
My mother used to raise anywhere from 50 to 100 chickens each summer....and butcher in the Fall. I used to hate butchering time. However...now I have 60 free range chickens and it is time to butcher ......I am now 55 and I forgot how Mom used to do it all. Your video helped to refresh my forgetful memory and gave me some great tips too. Thanks for such a helpful video!!
Russ- Thanks so much. I REALLY appreciated your respect for the animal, and the the no nonsense approach. I used your video to butcher 8 roosters this weekend and it all went smoother than I thought. The only exception being the throat cut... I think I made the cut right but some of them took longer to die than others and that was hard. If you ever remake it maybe you could put a couple more seconds on that part. Otherwise it was all great!
@anthonyfaircloth Hey, that throat cut has to be pretty long and deep. if it took a long time you might not have cut the right vessel. You can also cut them on both sides. I usually end up making a diagonal cut as well. Glad we could help.

i don't understand why letting it bleed out is more humane than breaking its neck or cutting its head clean off... if you cut its head off, the heart would keep beating after brain death and bleed it out anyways.

@deeisneat Look up Mike the Headless Chicken & you won't want to chop! Mike lived for ~ 18 months with no head. THAT would be sad! This is more humane & peaceful.

@deeisneat Well you got to understand how a chicken works. You can cut it's head off and It'll still run around. Best to bleed it out and let it die in a few seconds then a few minutes. Also guessing it makes it easier in the cleaning process but I'm not sure on that.

@RedKremlin17 Because of the fat in the meat. If you ever get the chance to see a free ranged chicken the meat will be a good pink.

@jjjtubo I believe they feel a sleeping feeling as blood rushes out. To any butchers out, correct me if I am wrong.

@jjjtubo Well, just cutting the head off was the way I was taught but bleeding them out first is much quieter. If you just cut off their heads they flop all over the place. Russ

@WhiteGreenStripes Don't be sad. Russ' chickens get to run around in the woods all day and act like chickens. If you're going to be sad, be sad for those chickens that spend their entire life crammed into commercial chicken houses, full of growth hormones and antibiotics...actually feel sad for folks that have to eat them.

@mikenco Just skip the word pluck and think more in terms of wiping or rubbing the feathers off. In the end the last few feathers that remain on the wingtips and some of the hard to get places can be pulled out or scraped out with a knife. It is by far the worst part of the whole operation.

Hardly anyone in the UK would know how to do this (relative to the number of people). But I live here and I want to expand my land and keep chickens and maybe pigs too. I don't have any problem killing for food. I've done it with fish, pheasants and rabbits, but not chickens yet.

@Enderwiggan1 The old testament is full of ancient wisdom that most of us take for granted. Example- washing your hands before a meal, not allowing open sewers and much much more. Today we live like these things are common sense but you go to a place that has open sewage running down the street and then you begin to realize how much our civilization owes the old testament and all it's wisdom. It's not weird it's smart, read Levticus and be grateful. America is blessed.

I'm a vegetarian, (mostly because I think it's wrong to eat animals if you're not willing to have their blood on your hands) but have often wondered what I would do if I was ever in a situation where I had to kill something for survival. I'm glad to see there are people concerned with limiting the animals pain and suffering. I was surprised, the chicken seemed quite calm until the end when it flapped around a little bit. I guess I could do it if I had to, I'd cry like a baby though.

@JayKay62969 Hi. Southern farm people that I know would never want an animal to suffer a slow death. From a Christian point of view your food is a gift and blessing from God. Not taking care of an animal by allowing it to suffer for lack of water or food or other mistreatment is considered a sin akin to laziness or drunkeness or worse. I don't see animals the way walt disney sees them. They are not created in the image of God but created for our proper use. The only emotion is thanksgiving.

@rtlmf cont. I really have no problem w/ hunters and those who raise farm animals. I do have a problem with commerical farming. I've been a veg for many years and most meat eaters will admit they couldn't hunt for or kill their own meat yet they have no problem with supporting an industry that thrives on animal abuse! As for the crying, I've never HAD to kill anything, it would be VERY upsetting. Taking life is a very serious thing (at least to me it is). I'm female btw.

Today people seem to think your cruel if you whip a child to teach him a lesson. My Grandfather thought it was far worse to spoil a child, he would have thought that child abuse or neglect. Today pople let their dogs run loose all over the place. My Grandfather would have never allowed his hounds to roam. It's a whole different way of thinking. thank you

@rtlmf Alien? How so? I think we are actually on the same wavelength. Except for the part about them being "for our proper use", I think they serve their purpose merely by existing. I also don't believe animals are w/out emotion. They may not express it the same way we do but that doesn't make it less significant. I have 5 cats and used to volunteer in a wildlife shelter so I've spent a lot of time around animals.

My mother used to raise anywhere from 50 to 100 chickens each summer....and butcher in the Fall. I used to hate butchering time. However...now I have 60 free range chickens and it is time to butcher ......I am now 55 and I forgot how Mom used to do it all. Your video helped to refresh my forgetful memory and gave me some great tips too. Thanks for such a helpful video!!

Russ- Thanks so much. I REALLY appreciated your respect for the animal, and the the no nonsense approach. I used your video to butcher 8 roosters this weekend and it all went smoother than I thought. The only exception being the throat cut... I think I made the cut right but some of them took longer to die than others and that was hard. If you ever remake it maybe you could put a couple more seconds on that part. Otherwise it was all great!

@anthonyfaircloth Hey, that throat cut has to be pretty long and deep. if it took a long time you might not have cut the right vessel. You can also cut them on both sides. I usually end up making a diagonal cut as well. Glad we could help.

@jondorotin Thank you. It's funny your from the Uk. I lived in the Uk when I was young and had a perfect English accent. We came back to Alabama and over time I lost the english and picked up the Southern. I think our address was weston on the green. I remember a rockwall in the back yard where we kept a pet rabbit. I also remember the swords, dinasours and mummies at the london museum and of course fish and chips. Don't guess I 'll ever get to go back. take care. Russ
