That green thing next to the Life Gauge called the Soul Gauge. Attack them while they guard it (it will change to red, making the whole life gauge glows red. ) Do single strong attacks at them (I prefer it over a combo, because you will soul crush and when you hit them again, the Finish won't work.)

When you Soul Crush (or something like that), it's kind of like a guard break but it's red, then press all four buttons, or a button that commands all 4, and you will finish them.
