Only Nintnedo and Konami used more than 4 channels in their music, and very rarely. In the Famicom, there was a chip included that allowed for an extra fifth channel. With Konami, they included a chip in their game cartridges that allowed for a fifth channel. This is known as VRC6.

Ya can only have four notes playing at the same time at any given time.
In technical terms, you can only have a four-channel polyphony.
I think the later-era Famicom allowed two more channels (check out the OST for the JPN Castlevania III and you'll see what I mean).
