About the inteviewer: This is why it's not recommended to rehearse every single word that you're gonna say. Whether it's an interview, a speech or whatever. It may look good in writing, but not when you say it out loud and you know every word you're gonna say. Sounds very un-natural.

The best way to memorize what questions you wanna ask, is to write words on a piece of paper, not whole sentences, and improvise.
