    if you've got a can of salmon in the cupboard you've always got a plan B--lately, I've been making these cakes and throwing them on hamburger buns and eating them for lunch, which is not a habit I recommend getting into.

  • Nice video...and YES, keep the bones and skin in there...chock full of calcium and Vitamin D...the salmon offers Omega 3's too. Great nutrition in a can, and Walgreen's offered a 15 oz can Chicken of the Sea pink salmon for $1.99 this past week--good food for hard times!

    yes...one of the best bargains you can get in the supermarket, especially when you can find a sale. I ALWAYS have a few cans in the cabinet...in fact I made these just last night and served them with a side of vegetable pasta. We had one patty left over and it will soon find itself on a bun and make a tasty "burger" for lunch.

    I started eating and experimenting with canned fish recipes because I read so much positive information about the nutritional value of this food. Alot of "fresh" fish nowadays is expensive and often farm-raised and inferior with regard to nutritional value. The canned salmon w/ skin and bones is best because it is caught wild and minimally processed.

  • @FromUnderTheRock - The only thing that mentally turned me off were having the bones in which I think I got most out but kept thinking I was going to have one poke me and although they're boiled it kinda turned me off at the time but hey the cakes turned out really good that I made -=)

  • Can you please tell me why my salmon cakes always stick to my pan. i put the right amount of oil in pan & med heat but when i flip them the second time they stick..

  • @music706 the second flip is often the harder flip...when I have a problem, I always blame the pan.

    I think the mustard-based sauce is my favorite with the salmon cakes, but I've also been using a sauce of mayonnaise, lemon juice, and dill lately...it makes the dish seem a little fancier if you're serving high-brow types.

  • Salmon cakes are the bomb. I make them with red salmon, no vegetable but with bread crumb, for filler i guess. mac and cheese on the side is a must.

  • I've flirted with the red salmon...but I'm soooo damn cheap. It's almost a bad habit (my frugality).

  • im in alaska, red salmon are a dime adozen and they are such high quality, you can even catch your own, i live 25 miles from a huge river. Loved the salmon cakes btw lol

  • Yeah... I lived one summer on the Kenai River in Cooper Landing, AK. We had salmon for breakfast, lunch, and dinner (unless we were having grayling or halibut).

  • I tried these today, and they were VERY good!

    I usually make salmon patties/cakes with cracker crumbs, but this method is a huge improvement. The only thing thing I did differently was to add a little horseradish to the sauce. Excellent! Did you say "zombie brains"?

  • The first time I saw salmon in a can was at a friends house. His mom asked me to stay for supper. Then I saw that shit come out of the can and it looked like someone had thrown week old fish through a fan. I was sorry I said yes. I picked at it a little bit and his mom let me off the hook, even though his dad looked like he was going to kill my picky ass. I eat sardines though, so go figure. In oil, on saltines, with an ice cold Bud.

  • Yeah...any canned salmon dish should be prepared well out of sight. The reason I left the can opening in the vid was to prepare the uninitiated chef for the ugliness to come. But many foods are unsightly during prep, and it's often a benefit to the diner if they are spared a tour of the sausage factory.

  • Well said, Buck. If you all haven't already figured it out, you might want to take out the trash after making the dish and before serving. Of course, none of that matters if you don't wash your hands after taking out the trash. It's all about covering your ass. BTW, the dish went well! Great recipe. Pesronally, I like to eat salmon straight from the can, but that's away from the ladies of course. Think I'll make her your Waldorf Salad next.

  • At least you picked out the nasty stuff. I can't even eat those little spines in the sardines. I hear you on the prep hiding. I used to work on the kill floor at a beef packing plant for a couple of years in the 70's. Cutting out the esophagus and the neck tendon and tossing it into the dog food grinder below me. Yahoo! I ate peanut butter and jelly the first few months I worked there.

  • I cook Thai and other Asian dishes with regularity. When I eat out, my second favorite cuisine is Indian, and my first is Ethiopian. For me, the best thing about visiting cities like San Francisco, Washington D.C., or Seattle is the chance to eat great Ethiopian. I've tried to prepare it at home, with little success. My downfall has always been the injera!

  • I've used green onions before and they do work very well, and also a great way to add color if you don't like red peppers. I'd like to try jalepenos or some other kind of hot pepper in the future.

    They r really good.

    I always add a different taste everytime i make them. Like this time, i put peppers, onions, and shrimps. With different kinds of salmon meat.

    It actually taste better than all the other times i have made Salmon Cakes : )

  • I've seen fresh salmon blended in a food processor with cream for salmon cakes, although I've never used fresh salmon for cakes. I love salmon too much---if it's a salmon steak---I gotta broil it. I became hooked on Salmon when I lived on the Kenai River south of Anchorage. We had thick salmon steaks at the drop of a hat.

  • I have a question - You said "no bread crumbs" but I am sure my Mom used them when she made salmon patties when I was little.

    If you had used bread crumbs what would you have done with them? Mix them in or coat them way you would do fried green tomatoes?

  • I've seen bread crumbs used both ways, as a coating and as a binding ingredient along with the egg. In fact, my mother always added bread crumbs into the mix--which I USED to do. Cutting out the bread crumbs cuts the carbs. Initially, the cakes have to be handled with a little extra care, but once one side browns in the pan, you're home free. Passing on the bread crumbs also gives the cakes a better flavor, I think.

  • If you haven't given it a try, go with Japanese bread crumbs (also called panko). They are very light (weight wise as well as flavor wise) and add a serious crunch without messing much with the flavor.

    And for those that want to get seriously fancy pants, this dish (prepared with the dusting of bread crumbs) is called "salmon croquettes". ;-)
