The Jar item in the lab was the cremator head, the cremator was an npc that would walk the streets with an acid firing gun to remove corpses from battles, you could fight him and get the gun to use on the combine and turn them into dust, it was removed from the game though but the head remained as a little hint towards him, theres a huge amount of info on it on the half life wikia
