  • This doesn't tell me how to choose a CUT of beef. It tells me how to know if the cut I've chosen is quality or not. And even then isn't correct. >.<

  • Color can be deceptive these days... a lot of meat is packed with carbon monoxide, which makes it brighter red, even if the meat is a past its prime..

  • @ghuegel I work in a grocery store. I know all about it. Our meats are sold at a lower price in like 24 hours because of it. Say it costs $7.49 for a Ny Strip...by the next afternoon or evening, that same strip will cost around $5.89 I purchased a $5.89 Strip for $3.59 just two days ago. sure enough the "bright red fresh look" was only 1/2 there. I had to cook it at Medium....Didn't upset my stomach because I rinsed it thoroughly then grilled it at high heat.

  • What a noob. A beef should NEVER be DARK red. Light red = young meat = better meat to eat.

  • @Stesnjak erm no. You realise that usually beef will hang for anywhere up to 30 days, to become more soft and tender? a dark red color = juicy, tender meat.

  • i have been a chef for more than 10 years and everything you have been told in this video is bullshit steak should be hung for a minimum of 21 days so it turns a really dark red colour and a slight yellowish fat if you dont beleive me ask a real butcher not some prick in a supermarket

  • And in this video has he been talking about the hanging process? As for the things he says about the smell his correct. Good meat shouldn't smell like a dead dog. You will never be able to get all that bad taste out of the meat. And as a chef you should know how vital the quality of the meat is.

  • What grocery store will let you open a package to touch the meat to see if its greasy?? after you've bought it its too damn late! Also, WTF yall talkin bout meat shouldn't be red?? i could see if it was dry-aged....but grocery stores cut and package it....that would make it fresh correct??

    to pick a steak or cut of meat that is red and fresh looking is crap you want it to be a bit dry lookin dark it has more flavour in it this red meat isnt what he would eat or your butcher your butcher hides the dark dry meat cause it has more flavour he wants to eat it

  • you can age beef up to three months in vacum packed bags and with the right storage. the meat hes showing you is right in color and the fat is very wite it is prime beef

  • it shoulnt be dark red, the darker the meat is means is old cow.fat should be white and not yellowish in color. when buying meat u should look for nice light color with fat in between wich is called marbled. dont ever buy meat with yellowish fat.

    grass fed beef usually has fat with a light yellow tinge to it, due to the chloroform in the grass.
