  • @pradeepshah100 It is called the Family Grain Mill. You can purchase it at a number of places online. If you have a Kitchen Aid mixer, you can actually purchase the mill attachment (a much cheaper alternative to buying the entire mill). There are also flaker (making your own oatmeal, etc) and grinder (for meats) attachments as well.

  • I would not roll it flat like pizza dough as this will make a dense loaf. I would also add some ascorbic acid (vitamin c) to maintain freshness longer (almost 1 week).

  • @MrMadmax900 I can appreciate that. :) I've tried it both ways. It is somewhat dense either way because of the freshly milled whole wheat. I just do it that way because it forms a nicer shaped loaf. It still rises again after that though.

  • @momsmentor --I am so glad to see someone else making fresh milled bread! I used a hand grinder, but that's only because I burn calories grinding. LOL.. I add the vitamin C like madmax, but I do it because it smooths the bread texture. Never thought of soy lecithin And you're right, this bread is always more dense because it is fresh milled.

  • @redeemedwench hand grinder is also good when you live in hurricane zone, like me :) I have both. The machine makes for better videos. I haven't thought about adding the C, but that's a great idea!

  • If you are asking for a lecithin substitute, you can try substituting equal parts of xantham gum. I have not personally tried this myself, but I understand that it will work just as well. If you do try it, please let us know how it worked for you.

  • Sorry for the delay, I've been out of town and unable to access YouTube. Yes, you can exchange equal parts of milk for honey. I probably would only use around 1/4 to 1/3c of honey at most though. That usually makes it plenty sweet. But experiment to suit your tastebuds and let us know how it works out. :)

  • If there anyway to add a little more honey to this recipe I love honey wheat bread or is that amount enough to taste it a bit?

  • I have made it without the lecithin. The main difference is that it is a little more crumbly. I am not sure if there is something else that can be substituted or not.

  • Seems like a lot of yeast. Is that fast acting dry yeast? Approximatly how long till it doubles?

  • @bfenti The brand I use is SAF instant. It is an active dry yeast. 1 Tablespoon is a normal amount for recipes using whole grains to make bread. However, depending on the region in which you live: altitude and humidity may affect your bread making. The type/quality of the flour will vary your recipe needs also. I have found this amount of yeast works best combined with the other ingredients in this recipe, but you may wish you to play with the amount if you aren't happy with the results.

  • @bfenti part 2 of response: Freshly milled flour is very nutrient dense and heavy. Less yeast is not effective with this flour. I HIGHLY recommend getting a mill (there are affordable, easy to use hand mills available also). This is the only way to ensure that your flour is fresh and entirely whole grain. It usually takes about 30 minutes for the dough in this recipe to rise until double.

  • Thanks Leslie. I enjoyed your bread recipe and although I don't have a mill or even a mixer I'll give it a try. Please include the recipe in the description section things happended so fast it was hard to write it all down. Could you use more words in your search words. It was hard to find? Can you share any other recipes??

  • @bfenti Thank you for your input. As you can see I am new to this venue, but I'm working hard to improve. I agree with the speed and would've preferred to slow it down, however this was actually a school project with a time limit on it (which I went over--was supposed to be two minutes) :). In the future, I will select a better speed. I only recently learned about being able to list the recipe in the comments and haven't had a chance to do that yet, but will get it done this weekend.

  • @bfenti part 2 of response: I apologize for the difficulty in finding me in your search. It would be helpful to know what words you were using to find this recipe and I will add them to my list. And yes, I do have plans to begin placing more recipe videos online, hopefully on a weekly basis, starting in September (I'd do it sooner, but I need some time to get through the back to school season with my kids). Is there something in particular you would like me to show?
