its the computer playing. Notice how you hear no human voice and also notice how the computer will hold down the last note played when there are rests (including the drums, which as you pointed out can't happen). Although you can do it on guitar, it's unlikely someone will do it for every single rest.

mm i dont really have a good camera, but i've tried full band and i could. If you're talking about online, u can't due to wii online capabilities, if other it may be connection or bluetooth problem with ur wii remotes or intruments.

Yea, but that's not the game default. In the real game, it's a guy singing. In career mode you have the option of being a guy or girl so I guess the person playing decided to be a girl.
