I would have loved to hear his response to God being unchangeable when you combine that belief with the Adam-God doctrine. According to Adam-God, God was once a man and become a God. Then God became the man Adam, ate the forbidden fruit, died, and then became God again. Even after becoming a God he became a man again. God even died again. How is that unchangeable? His response (at 21:54) about God being unchangeable since he obtained Godhood conflicts with the Adam-God doctrine.
You brought up some Mormon scripture (in your interviews with Jared and Aaron) to show how Joseph taught an unchangeable God during the early years of the church.
