E' difficile da spiegare a parole e non conoscendo il tuo livello posso solo dirti che per imparare è necessario prima saper partire dalla riva con l'acqua all'altezza della pancia ed essere in grado di planare con i piedi nelle straps

How much wind is required toe be able to do a waterstart?

@rastablader Very much wind, but also depends on sail size and body weight. On average, 180 lb. body, 6.0 sail size, about 20 knots of wind
