  • Mistakes to the Italian recipe:

    No milk, cream or similar is mixed with the eggs

    The egg mixture is poured over the other ingredients in the pan, not mixed with the other stuff and then put into the pan

    You don't sprinkle anything on the top od a frittata, if you want cheese you mix some grated cheese with the eggs before pouring over the other ingredients

    The oven is not an option. you either flip it or you don't. I prefer it flipped.

  • Hi, How do you know when it is done after you flip it? Are you just looking to see if it is no longer runny? Also my flipping skills... well, I've tried with a plate but it still comes out messy. If I were to put it in the oven what temperature should I set it to and for how long.

  • After you flip it, you just cooka bout 5 more minutes, until it is set (yes, no longer runny and sort of custard like)

    You can also just put it in a 350 oven for 5 minutes (after the bottom is set) and then remove, sprinkle with cheese and return to oven for maybe 2 mins more (until cheese starts to melt) if you cover it after you add the cheese the cheese melts better, but don't cover it for too long or it will get soggy (because you start to steam the dish)
