The reason they were all tired and hungry was because they had to keep doing that scene over dozens of times. They had more dialogue, but she flubbed it up. After so many times, Harrison finally got fed up saying his lines back and just said 'I know" to get the scene over.
I just realized.. while I haven't seen this movie in a long time.. I never understood WHY Vader was carbon freezing Han. Um, was it "I am doing this just because I can and I am the local dick"? Or did he have some actual reason to do this that made sense?
@adrius Vader intended to freeze Luke Skywalker, but needed to test it first. He tested whether a human could survive the process on Han, because no one had ever tried to do it. Boba Fett didn't like the idea, cause he needed Han alive to collect the bounty from Jaba, but Vader promised to pay the bounty if the process killed Han.

There is speculation in the books that he intended to reveal their relation to Luke at a safer location, and then train Luke in secret to help him defeat the Emperor.
