Julia Child is a brand name... sorta like Martha Stewart. They both are not regarded to be the End All of any recipes out there. Besides Julia Child is an American doing French cooking. Plz remember: a recipe is a happy accident that has been documented so that we may repeat the results. Manskil's recipe is simple & good.

I'll use the recipes only for numbers, but i really plan to do it your way, although ill be tossing that beef around in the flour to give it a good crust.

I used shin of beef here (it's got a great flavour) but any stewing steak is fine. As far as wine, traditionally you are supposed to use a young, red burgundy. Any red wine is fine. It depends how much you want to spend, but don't use any wine for cooking that you wouldn't be happy to drink.
