  • what I like the most about Gordon is that he knows why he does stuff so he can explain why. Other chefs just know that they have to do it this way and not that way, that's all.

  • The only mistake that you could make is draining away the water used to boil the broccoli and use plain water instead.

  • @Worm9874 I used feta cheese as a substitute and it worked really good. It's creamy and slightly salty i think it goes well with the broccoli soup.

  • This seems so easy that I want to try it, specially considering that broccoli has a lot of protein for a vegetable

  • Now that I've made this every day for 2 weeks and love it, I've found the tweaks that make this recipe even better: Add two handfuls of steamed spinach.  And in the blender, add 10-15 drops of Tabasco and 1 or 2 tablespoons of soy sauce. DELICIOUS. Simon Cowell's original recipe is still very good, and is a good start for my add-ons.

    My daily poops now have a dark green tinge.

  • @1wantc0ff33 Gives the chance for the salt to..sort of...melt into the whole dish if that makes sense.

    Seasoning afterwards should be just about adjusting, adding a little more salt, pepper or whatever but most of the salt should be added near the beginning.

    Whenever you boil something, be it broccoli, potatoes, or pasta, you want to make sure that you boil it with salted water, otherwise it'll come out bland. This is because the salted water seeps into the food, but if you wait till the end to add the salt it'll just stay on top, you know? You can add the salt before or after it starts boiling, but make sure you add it in before you throw your ingredients in. And use lots.

    I use half, if not less. The end result is the base is more concentrated.

  • @kanukster He uses a larger volume of water so that when the broccoli goes in it can return to boiling more quickly, and therefore cook faster. Using less water will have a more concentrated broth but it will take longer to heat the water back up. Cooking it quickly also keeps more flavor in the broccoli and less in the water. Both way works, it really just comes down to what prefer doing and which you think tastes better.

  • used his method of using the stock and used it instead of chicken stock. but i did stick to using onion and carrot in it came out great the color is the best

    But my wife absolutely hates blue cheese so this little method of putting the cheese in the bowl... slightly pretentious as it may appear... allows for an easy compromise!

    I think the pond water result is due to: adding too much water, and/or waiting too long to blend after boiling.

  • havn't tried it with broccoli soup, but scallops work really well sat on top of cauliflower soup. then take it to the next level by putting some julienned carrot and courgette in the bottom of the bowel before pouring the soup in. now THAT is nice!

  • Wow - this is really really good - I was surprised. I think it tastes best if you use kosher or sea salt, though, not regular, since salt and pepper are the only seasonings.

    It was just fantastic.

  • I love this soup. The goat cheese really finishes it, you can let it melt into the soup and stir it around. :)

  • Just made this, was absolutely brilliant. He is spot on. It tastes like a soup with 10+ ingredients. Hard to believe it is only broccoli and water.

    Some tips:

    -add plenty of salt in the cooking process

    -blend very well, if you don't it won't be uniform. Gordon has a very high powered blender so your at home blender will take longer

    -add a little bit of water at a time, it goes from nice and thick to watery very quickly, so don't add all the water into the blender at once.

  • onion powder doesn't fit at all imho, but you can add a little bit of garlic, although it's definitely not necessary. The soup is f****** delicious the way he presented it - i tried it yesterday ... no need to add anything!

  • omg, it's good! I ust made it. it was easy and DOES taste delicious. took under 5 minutes, seriously. Don't boil it for too long or else the broccoli loses its nutrients. And the best part is that because you use the water you dont' lose the nutrient goodness that are taken in the water.
