You can even use a pork shoulder with skin and its much cheaper. I'm filipino and the way i do it is boil the meat about 75% done dont make the meat too soft or it will fall apart. most important is to let the met cool down to room temperature and pat dry or skin will not get crispy. to season i just rub Fish sauce all over it and bake for 1.5 hours at 300 then broil high skin up for 5-10 minutes skin will brown and bubble. easy to burn it while on broil so watch it
