  • OMG! you mixed the spaghetti & bacon straight into the egg... and you didn't leave the bacon to cool down??? such sacrilegious cooking!

  • man u put alot of oil for the bacon. u dont need to put oil cuz when u cook the bacon its fat will in a way become oil

    and I forgot to mention but this isnt that bad compared to how else they use raw egg because the heat of the carbonara already cooks the egg that it's dipped in,

    Raw egg is optional, this is just how the Japanese do it, so shut up.

    Sake does not MEAN alcohol in Japanese, it's just a japanese alcoholic drink made from rice. It's not a translation.

    you can replace sake with cooking rice wine, they sell it in the asian section of a grocery store.

  • There was something in the bottom of the bowl that he initially put the pasta into and mixed it with! You can se it if you watch the bowl he puts it in, and then you can see the pasta turning more yellow and coated in something. Sorry if I'm being stupid, but what is it? It isn't explained. More olive oil, maybe?

  • You are not being stupid. There was nobody SAYING anything about anything during the procedure. I am ASSUMING the yellow liquid at the bottom of the bowl was either beaten whole eggs or egg yolks. I suspect mine is a safe assumption.

  • Hi, then I introduce me, I am an Italian Chef, beautiful the sentence on the beauty of the different world, but obviously this can hardly be applied to the kitchen, there are some variations in a recipe, but this cannot denaturalize the origin of the same recipe.

  • You can use less oil if you are using a non stick pan. The frying pan used in this video looks like those regular aluminium frying pans you get in a commercial kitchen. Non stick pans don't last long in a commercial kitchen and more expensive to replace. Besides, there is plenty of flavor in good quality olive oil, so don't be afraid to use more of it. :)

  • olive oil and even canola oil are good sources of unsaturated fats. better than using butter.

  • It's actually Italian. He is just calling it "Japanese Carbonara" because its not really authentic Italian Carbonara but its Carbonara nevertheless. Looks really easy :)

  • ngswcook's recipe does call for raw egg yolk. It's in the ingredients list, 4 of them. That's what's in the bowl into which he mixes them when the noodles come off the fire.

  • Yolks will firm at around the 62c (145f), so, although this looks strange to me as a westerner, it's quite clever really as the food in the pan would be way hot enough to cook the egg without over cooking it.

    Even in Italian carbonara you do not need to Boil the sauce once the yolks have been added

  • As stated in the recipe on the right hand side....it is 4 egg yolk (raw). To stir in the hot pasta ..the heat will cook the eggs making the pasta creamy .

  • I believe it was the 4 egg yolks. It is the only ingredient stated that wasn't "used" in the film.

  • go to five different families from five different regions in italy and i'm sure you'll get five different recipes. some will use whole eggs, other only egg yolks. some will add butter, others will use olive oil. and some will even add cream. even your recipe, which calls for pecorino romano OR parmiggiano just shows that carbonara recipes can be modified (pecorino and parmiggiano taste nothing alike).

    i'm glad i live in a world where no two recipes are alike. what a boring wold that would be.

  • you can add the cheese as a replacement for the nori. since nori is seaweed

  • Mix some cheese into the egg yolks before adding the hot pasta mixture if you must. Otherwise just add it at the end. It's not like you can't change recipes you find online.
