That's the first thing I thought as well, of course I could always use the built-in valve! In the future I think that will become my hot liquor tank, ( why is it called "liquor"? is it liquid??) HLT in any case. I am very close to scoring a 15gallon keg, so I can rebuild my old burner to hold that, and I'll end up with 3-tier of sorts.

About getting your boil kettle out of that stand... can you cut a section out of that top ring? Say using a dremel tool with a cut-off wheel.
