  • if I may ask, what kind of pot and pan are you using in the video? i love to cook and it seems that your cookware is perfect for all of the foods you have so far prepared. my dad and i like to mix dishes from other countries so it is not uncommon to see a popular dish from one nation cooked in a different way from another nation. i wish to continue his teachings to never stay with one style so if i may have the name of your pots and pans i would be very grateful. thank you! :)

  • i've tried making my own curry paste and it turned out bad and ruined the taste of the curry and the consistency ended up like glue. so i've got some curry blocks and i'm gonna try them out soon.

  • @chong9489 well for one with or without foam the taste is different. You don't have to but for better results you remove it.. Probably cause the foam is a bunch of air..

  • Thanks for the tip of using the strainer when adding the curry paste so it doesn't lump up with the vegetables. I always took out about a cup of stock, mixed it separately with the curry in a bowl, then added it back in after mixing. Your way is much faster!

  • @noorieboorie It is probably better to add them for a richer flavor. Using only the curry block might taste a bit bitter, I think.

  • in america, they sell those curry blocks in a lot of regular grocery stores in the asian section. and if not, the asian stores will always have them. not that hard to find.

  • if you want curry block, try to find some Thai/chinese/japan grocery store, they are available more and more, i'm in czech republic and we have one around the corner (not longer than half a year) :)

  • You can find Curry blocks (カレーのルー) in any Chinese/Asian/Japanese food store here in France. how much quantity of Curry blocks I put in the stock if I don't use the roux you're making from zero?^^;

    1) I'd never have tought of eating soba with curry, but now I'll definitely do it.

    2) I like Jpanese curry, and now I know how to make it from scratch out of fresh ingredients.

  • S&B curry (aka Vermont curry) has actually been available for many years in the USA. My Japanese exchange students are the ones who first told me about it.You can buy it in almost any grocery store, however about 15 years ago you could only get it at an Asian market. Good idea showing how to make curry sauce from scratch. Now I'm hungry.....I'm going to make.....Curry Soba........Itadakimasu!!

    I always used the pre-made blocks but I think I'll try making my own paste next time. This allows me more control of what goes in it. Sweet!

  • Foam is the impurity in the food and can affect the foods flavor

  • @gloriagenae Actually, foam is just proteins which have broken break down while boiling/simmering at high temperatures. If you cook at lower temperatures, it can be avoided, and it's also possible to allow the foam to redistribute into the stock. However, it is supposedly possible for foam to affect flavor, particularly when fermenting foods as the proteins may allow the growth of other, unwanted bacteria

  • @vanh0ek He said a couple of times that it was to remove bitterness, but sometimes its also used to remove some of the unpleasant smell.

  • @vanh0ek It's a good habit to get into any time you make a broth or stock. Western chefs do it too. the foam doen't taste nice and makes your broth cloudy... it's all the impurities that float to the top.

    hur? it seems like It was actually not that hard to get curry roux in other countries. Now use curry roux and soba soup then. It's much faster and delicious! So stop complaining :p
