    Hate to break it to you buddy but a frying pan is a far superior object for cooking a steak, a burger or anything you want instead of a grill. If anything if a flay top is around (which I doubt it would) use that. You are craven when it comes to to frying if you think otherwise.

  • I don't know about you guys but id rather have my steak served to me whole. its a nice for presentation and all when you slice it, but when you serve it whole, you get all the juices of the steak and you don't have to worry about it getting even more cold when it is sliced seeing as how you cut it for yourself at your own pace.

I had a rare steak in paris with my dad once, it arrived chard on the outside and more or less raw on the inside and there was blood running out onto the plate, it took them 3 attempts to get it rite, in the end I should have just left it and ordered something vegetarian cause i couldn't eat it, put me off that did!

  • @XXTheRealMcCoyXX That's not blood - When pigs, cows etc are slaughtered, they're hung on a big metal hook and all the blood in the animal is left to drain out. What you're seeing is something called Myoglobin, which is a protein. That protein mixes with the water in the steak, leaving it with that pink juicy look.

    Also, the juice you're seeing isn't harmful. Even if a steak is cooked rare, it's still cooked through completely to a certain temperature so it's not harmful. Try it sometime!

  • @412856 i believe that looks more like what you would call a strip steak in the US. in the video he says sirloin, but that may be because in countries like britain and australia they call a strip steak "boneless sirloin" (see wikipedia entry on "strip steak")

    A nice rule of thumb. If you order your steak WELL DONE you will get a shity piece of meat because quite frankly you have charred and ruined something that could have been good and I have no reason to give you what I will give to the man who wanted the rare. A person who orders well done has ruined their meal....unless they HAVE to eat it well done for medical reasons.

  • @zokre75 You can cook it rare, medium rare, medium, or even well done. A steak is a steak. The nutritional intake is always going to be the same. The only difference really is that some immune systems cannot properly digest and extract the same nutrition from said steak if it is cooked below medium. And, therefore, they can possibly become ill. Neither way is healthier. Steak is always going to be high in iron and protein, no matter how much you cook it.

  • If you're going to eat a steak well-done, you might as well be eating hot dogs. You'll get more flavor out of it and it's cheaper.

    Cuz at well-done a steak is murdered. Any flavor or texture it may once have had is long, long gone. All it is at that point is a chewy piece of protein.

  • @sbarbul60 High at first. Until the pan heats up. When the bottom of the pan makes a drop of water hiss, turn heat to medium. Add a small amount of oil. Salt and pepper your steak and put it in.

    Re: touching the steak: If you're cooking 8 steaks are you going to touch them all? I like my steak medium/medium rare, so I let it cook until the blood starts to surface, and then I cook it for another 15 seconds. And then I let it rest on a plate for 6-8 minutes before I cut it.

  • You can have your beef however you want, from raw to well-done, it's a matter of preference.

    Store it properly; be wary of contamination issues; source from good suppliers; use a little bloody commonsense and enjoy your meat.

    If I got served a well-done steak at your restaurant yourboycal I'd send it back, I'll bet the chef cooking it would agree with me; honestly what a waste of a beautiful product, no respect at all.

    Oh and I like steak tartare as well.

  • thats why all poultry and pork is always told to be cooked through. do you think, that world class chefs, over time, time n time again would say you can cook your beef rare if it was a massive health scare? NO! the only way cancer is increased by beef, is not cos of the cooking, its the large comsumption of red meat. red meat should be eaten at least 1/2 time a week. fruit veg n lean meat is the basis of a diet. so all this other nonsense down below is crap.

  • this is ridiculous. im a chef. an with beef, the bacteria is on the surface, thats why it can be cooked rare but the bacteria is not as harmful as that of chicken undercooked for example. like lamb, the bacteria is more deeper, just under the surface, it can be cooked medium but not rare. as the cooking kills the bacteria. then poultry and pork has to be cooked thoroughly as the bacteria is deep into the flesh and is harmful.

  • Why not deep fry the steak with all the oil that was in there. IMO this is not a good way to cook steak. Dont care of he is Gordon Ramsay or not. If I had to do it, I wouldnt pour oil into a preheated pan because its going to start smoking and burning. A well marbled steak doesnt need oil anyway. As soon as it hits the preheated skillet, it will relase some fat anyway.

  • @draggy7 Well I'm just saying, there is no need for the oil he threw into the pan at the begining. Has nothing to do with being a Chef or not. The oil serves no purpose here since its a neutral oil which has no flavour of its own. A marbled steak wont stick to a cast pan anyway and even if it did, it would break itself free in a minute. The butter at the end is fine for flavour. Also there is no need to introduce a polyunsaturated oil to a dish that already has tasty saturated fat :)

  • @svtcontour I hate the way he cooks this steak but to say that the oil serves no purpose is wrong. Do you think that the oil has no effect? What does oil do? when you put oil in a pan it speeds up the heat transfer from the source to the thing you are cooking. I'm not saying that it is a good technique here - just saying that you're wrong to think that it has no effect on the cooking process.

  • @scrumpymanjack I agree with you, but the meat (a steak - at least any good one is well marbled) has fat already. The moment it will hit the pan, it start releasing fat from the marbled area and it will then do what the oil would be doing. If this was a piece of non fat meat, then I'd agree but any steak worth anything will have marbling therefore its already doing what the oil will do - hence why its not needed. Again my opinion but logically its not necessary for a fatty meat.

  • I have problems with this video. First, the steak looks almost raw in the middle, which is terrible (see my comment to yourboycal). But the main problem is the "texture" test he uses, which is retarded. It assumes that everyone has the same skin texture on hands. Guess what, Gordon...they don't. Construction worker vs. surgeon? Only way to guage this is with a digital meat thermometer with thin probe. Also, you must let steak rest at least five minutes so that juices return to rightful place.

  • @Bungle2010 No, it's not supposed to be like that. Read my comment to yourboycal - there is an optimum internal temperature for steak. That is not my opinion, it is science. It's hard to tell in the video but I'm pretty sure Gordon missed it here. As for the test, it is simply stupid. Is everyone's hand the same texture? Don't get me wrong - I love his cooking. But on this occasion, I think he could have done it better.

  • @scrumpymanjack It's not "science", it's your opinion. Everyone has their own preference for steak: some like it well done, and on the other end of the scale, others like it blue. Gordon set out to cook a steak rare, and that's what he achieved.

    As for the test, how else would you test a steak's doneness? Stick a thermometer into it? Two problems with that: first by sticking something into it your letting the juices out, and secondly not all of us have one.

  • @Bungle2010 Yes, stick a thermometer into it. If the probe is thin, which it should be on a good digital thermometer, no juices run out. It seals as soon as you pull out the probe. Second, if you don't have one, then you don't care about cooking well. Cooking meat without an accurate thermometer is like driving in the dark without headlights - stupid and dangerous. If you don't have one, get one. They cost $20 for crying out loud.

That "Stupid test" is the only test they use in steakhouses (like the one I worked in) and there is no such thing as an ''optimum internal temperature for steak". That's the dumbest thing I think I've ever heard. Rare, Medium Rare, Medium, Medium Well, Well. All different temperatures, none of them ''optimum''.

  • @Joshman775 I'm delighted that I don't know the steakhouse you work in. 130 degrees is the internal temperature at which the fats start to melt and permeate through the meat, giving it flavour. The temperature needed for a well-done steak ENSURES that the meat is tough and dry. If you cook it blue, the cell tissues have not broken down and the fat has not melted. Result? Tougher meat and less flavour. You should be ashamed of yourself for not knowing that.

  • @yourboycal You're wrong, actually. The ideal point for a steak is medium rare - internal temperature of 125-135 degrees F. Why? Because that is the temp at which the fat and collagens begin to melt, and spread flavour throughout the muscle fibres. Any less, and you have practially raw meat - not good. Any more, and the proteins begin to toughen the meat. That's not taste, friend. That's science. Also, and on food hygiene, dont compare steak with pork. That is just stupid.

  • @yourboycal That's not true. Cut a raw steak in half. What colour is it? dark red or almost burgundy, never pink. Pink in the context of beef is cooked to a certain temperature. ie.   • @yourboycal i just said sashimi is freezed to kill those microbes. I'm a chemist and know that such microbes can not make you diseased or ill if they are dead. They make you ill by interfering with transcription/ translation/ replication (normal cell and protein processes). Mutagens give you cancer the same way acting on proto-oncogenes which are DNA strands, genes. Microbes/bacteria cannot be alive to do these things if they have been heated to just over 135 for a couple minutes.

    Some, but not all. Freezing may kill some of the present forms of bacteria. But for the most part, bacteria may simply freeze the growth state and then continue to grow once food has been thawed. A perfect and well known example of bacteria that cannot be killed through freezing is Salmonella.

  • @yourboycal so by raising the INTERNAL temperature of beef for a few minutes above 130ish in most cases or freezing sashimi, you will deprive these microbes of their living conditions. On top of that, you have a better chance of getting bacteria that would make you sick from touching a wall than you do from eating sashimi. Bacteria is everywhere and very few bacteria and viruses harm humans. Bacteria is all inside of you. The govt just says that to cover asses.

    "t’s safe to serve steak and other whole cuts of beef and lamb rare (not cooked in the middle) or blue (seared on the outside) as long as they have been properly sealed (cooked quickly and at a high temperature on the outside only) to kill any bacteria on the meat’s surface. "

WHy on earth would i eat pink meat ? when its not healthy ? You can enjoy all the pink rawness you like but for me i'll cook it properly to make sure everything is dead :)

    Millions of people enjoy rare and medium rare steaks every day and they are fine. I myself enjoy medium rare steaks frequently and I'm not dead yet. :-p

  • @Bungle2010 lool not with beef ? really ? do you know how many people i've known whom got sick from beef poisoning? I guess they were making it up right ? Guess how they like there meat? Undercooked just like you . But i guess it must be my imagination . Millions of people enjoy rare and medium rare steaks of course and there are also billions with cancer ? Correlation is not causation but its food for thought. I will properly cook my meat and whom i serve it too for safety. you enjoy pink ;)

  • @yourboycal I seriously doubt all those people got ill from eating rare steak. How come you know so many of them? They didn't all eat in your restaurant did they? :-p

  • @Bungle2010 Food poisoning is caused by certain bacteria, viruses, parasites, or toxins. Types of food poisoning include: •Botulism (Clostridium botulinum) •Campylobacter enteritis •Cholera •E. coli enteritis •Fish poisoning •Listeria •Staphylococcus aureus •Salmonella •Shigella just a list of a few things that need to be dealt with with proper cooking of meat. Unless you enjoy these little criters playing in yoru intestines messing up other things :D
  • @yourboycal Of course I know what food posining is, but "beef posining" isn't a specific disease. None of the things you mention are a problem with beef. Do a little Goolgling about rare steak and educate yourself. All the people in the know and official sources all say rare beef is fine. TBH I'm really surprised at your attitude to rare beef considering your profession. What would you do if someone came into your restaurant and wanted their steak cooked rare?

  • @Bungle2010 I don't think you have any clue what food posining is . Beef posining is just to show you what food i was talking about when the posining occured I know you don't pay much attention i have to simplify it for you . If someone came to me and wanted it rare i would give them what they wanted. But with warnings. Majority of them heed and change their ways , but some stubborn fools like you :) My attitude towards uncooked meat? Excuse your self :D I like meat cooked.

  • @yourboycal The point I'm making is that there was something else going on other than them just eating "underdone" meant. Also you should ask yourself why you claim to know several people it's happened to when most other people have no problems. Google "is it safe to ear rare beef" and look at the first two results.

    I fail to understand why you choose to ignore what is said by experts and other people in the know.

  • @Bungle2010 I can also show you links where it says the opposite. Its a matter of who you ask . Experts aren't always correct they must go with the data , as time goes on with long term studies you will see this become more apparent to any person who has the slightest clue from meat. I have first hand experince from dealing with people. The experts do as they are told by there funders. Undercooked meat = less energy wasted to produce the meal ;)

  • @Bungle2010 All the experts ? Hardly. But its easy to put all your eggs in one basket and stick ur head in the sand right? I know plenty of chefs that would agree with me. I have shown links of other "experts" who say meat should be cooked properly. Bacteria and other microbes are not only on the surface. You can enjoy pink with your experts all you like. But please don't try and force it on others. I perfer meat cooked like it should be :) mad?
