  • So many different versions of this. There's no way to tell what the original was like. Most of the recipes that I heard, though, say the head has to be white, so the seltzer is added before the chocolate syrup is mixed into the milk (under the foam) so the drink is brown but the head is snow-white.

  • I think a "true" egg cream has white foam, but I also prefer to make them with chocolate foam like in this video (some New Yorker I am...). One suggestion, though, it's more fun and tasty to drink these without the straw so you drink the foam as well XD

  • @llollercoaster It's root beer soda with a scoop of vanilla ice cream placed in with it. Gives it a much cooler, and rich flavor.

All these people commenting in the video think this is some nasty watered down chocolate syrup. While a root beer float is just watered down ice cream, and almost everyone here has probably had one before.

    The fact that you even think that I need to know what the ingredients of a root beer float are, let alone post it 3 times. Just shows how retarded you are.

  • I heard or rather remember seeing on a show that actual egg whites were used early on but that stopped due to health reasons. I've tried one before, wasn't a big fan of it.

  • this is where we part company, chef. granted, most people don't have a soda (seltzer) siphon, but you can get them pretty cheap these days. you hit that milk/chocolate syrup mixture with a seltzer siphon, all the while stirring vigorously with a long-handled sppon, and you've created an authentic new york chocolate egg cream. a frothy, bubbly, chocolate-y joy to be hold. trust me. that said, a fine job you've done there.
