If GT5's AI is the same as in Prologue then Forza 3 has it beat. It's much more intense pack racing and you really get the feeling you're racing against drivers who want to beat you rather than moving obstacles. But I'm looking forward to the Rally driving and other modes in GT5, Forza does tend to get a little samey after a while.
