I fear my first experience with raita wasn't the greatest. It had the consistency of milk. I don't think the restaurant I went to quite knows how to make it, as they also asked me if they were pronouncing it correctly. Never a good sign when a server asks "is it supposed to be like that?"

yums. I find that if I refrigerate it for an hour or two, the flavors meld together very nicely.
