the scary part is, way back in my youth, i really liked broccoli just a little flowery, sauteed with real butter and some nuttmeg, go ahead call me a nutt...
In the 90's kids shows made broccoli out to be a childs worst enemy. Alot of kids in my school wouldn't eat because of it but not me. I ate it like crazy. I like the larger cuts more then the smaller cuts. But like most children I loved it with cheese sause.
@RaidenTheAlmighty It's been discovered that some portion of the population lacks a certain enzyme (or some such genetic condition) which makes the chemicals in broccoli MUCH more bitter tasting than it does to the majority of the population, hence their vehement hatred of the veggie. I love the stuff, personally.
BTW, the method at 8:30 has produced perfect broccoli for me every time.
Interesting. A while ago, I read a similar thing about cucumbers. Apparently some people experience a strong and unpleasant taste when they eat them.
Also, I've found that steaming certain vegetables works extremely well for certain applications. I tried it on potatoes for potato salad and it was wonderful. The cooked perfectly without starting to fall apart like they would if you boiled them.
@RaidenTheAlmighty I hadn't heard that about cucumbers. Thank goodness I don't have that, as I love the taste and crunch they add to sandwiches, salsa, and salads. Good idea about steaming potatoes to give it that unique texture; I'll have to try that some time.
I want AB's knife. ZT is awesome, but a wee bit too pricey for me. It also happens to be owned by KAI USA, the company that owns Shun Cutlery, hence the AB connection.
Removing the dark green outer skin from Broccoli stalks leaves you with a REALLY tender and delicious center stalk! Cooked WITH your florets, but for just a minute longer, they are wonderful, but you can also save them, and use them julienned in salad, diced into Tuna or Chicken salad sandwiches, or sliced into stir-fries a' la bamboo shoots or water chestnuts.
I like my brocolli glazed with some olive oil, sprinkled with some sauce and a drop of soy sauce. Wrap in aluminium foil with plenty of space, grill for 10 minutes.
With frozen broccoli i pre-cooked it in boiling water until the florets were a little above room temperature, drain it, and then return it to the pot and warm it up the rest of the way with some butter and some salt. If it were only a little cheaper i'd be living off of broccoli as opposed to instant ramen and store brand soda.
if nutrients are leeched by overcooking the broccoli (and kids don't like it very much) couldn't you overcook it, strain the mush, and add other more flavorful ingredients to make a nutritious/good tasting vegetable soup? all the vitamins none of the chunk. I like vegetables myself but my siblings hate them for some reason so i wanted to find out if this would work.

marrrkeeee 2 years ago
He said boli was bad because it over cooks
i think the HI was to heat up ( with gas it can be that fast) then steam it on low heat
kakashiXAino 2 years ago
he meant to put high heat on it and then back it down to low.
And you don't think 1/3 cup of water will boil in 3 minutes?
