Well originally Lucas wanted the lightsaber to be like a broad sword, so that explains the original fight scenes.

Lore wise, Kenobi is an old man and cannot move like he used to. Darth is essentially a torso with mechanical limbs, so he can't either. Luke is a young Jedi and has not become adept yet. I'm sure Yoda could probably still kick it though.
